Tucked into the serene alleys of Tokyo’s upscale Aoyama district lies The Sakai Aoyama, an intimate culinary enclave where tradition and precision converge under the masterful eye of Taisho Naohito Fukudome. With limited counter seating, this omakase-only experience is intentionally personal—each movement, cut, and composition performed mere inches from the guest.
Chef Fukudome demonstrates a reverence for Edomae technique while embracing subtle innovation. His knife work is meticulous, and his handling of each cut of fish reveals both technical mastery and deep respect for the ingredient. Highlights of the evening included an ethereal kohada—balanced in its vinegaring and exquisitely tender—and a uni gunkan so pristine it needed nothing more than silence to appreciate.
The experience is elevated further by a cohesive team. The sous chef works in near-silent synchronicity with Fukudome, and the restaurant manager offers a warmth and attentiveness that enhances the evening with his cleverness and playful banter with Fukudome. Their collaborative choreography is as much a part of the performance as the food itself.
The Sakai Aoyama does not rely on theatrics or extravagance. Its strength lies in restraint, seasonality, and an unwavering commitment to craft. For those seeking a sushi experience that speaks in whispers rather than shouts, this hidden gem is...

I recently visited THE SAKAI Aoyama Sushi Restaurant, an establishment I had been curious about for quite some time. Finally having the chance to dine here was an exciting experience, and it certainly lived up to my expectations. The first thing that stood out to me was the restaurant's calm and sophisticated atmosphere. The refined design and comfortable lighting created a relaxed environment that was perfect for enjoying a meal.
The service was exceptional, with the staff providing warm and attentive hospitality. Upon entering, we were promptly guided to our seats, and the menu was thoroughly explained. The staff took the time to explain the different sushi options and courses in detail, which made it a bit difficult to choose what to order. In the end, I decided to go with the recommended course, which turned out to be an excellent choice.
The course was lavish, with dishes featuring fresh seasonal ingredients served one after another. The first course, an appetizer, immediately showcased the high quality of the ingredients. The sashimi platter was particularly memorable, offering a variety of fish that were all incredibly fresh. The flavor of the toro (fatty tuna) and uni (sea urchin) were especially striking, bursting with umami and leaving me speechless at how delicious they were.
The sushi itself was an absolute highlight. Each piece felt like a labor of love from the chef, with perfect balance between the rice and the toppings. The crab, ikura (salmon roe), and abalone were particularly outstanding. With every bite, the true flavor of the ingredients came through, and I was amazed at the depth of the taste. The temperature of the rice and the seasoning of the vinegar were also spot-on, creating a melt-in-your-mouth sensation that I’ll never forget.
The pairing of drinks was also a wonderful addition to the meal. In addition to a selection of excellent Japanese sake, there were also wines and shochu available, all of which paired perfectly with the dishes. We opted for a sake recommended by the sommelier, and its rich aroma and smooth taste complemented the sushi beautifully. It was a perfect pairing that made the experience even more enjoyable.
What truly makes THE SAKAI Aoyama stand out is not just the quality of its food, but also the meticulous attention to service. Through the meal, it was clear that the chefs take great pride in their craft and that there is a deep respect for the ingredients. The staff is also highly knowledgeable about the drinks, ensuring that you don’t have to worry about the best pairings, which adds an extra layer of enjoyment to the meal.
Lastly, while the atmosphere is relaxed, the restaurant is impeccably clean, offering a comfortable and pleasant dining experience. THE SAKAI Aoyama is truly a luxurious and refined sushi restaurant, ideal for special occasions. I definitely look forward to returning and experiencing it...
Read moreWe had an amazing Lunch experience here. Chef began by showing us all the fish that would be used in the course. From the start, it was clear how much thought went into crafting each piece. Every dish and nigiri was not only delicious but also beautifully presented. The use of seasonal ingredients like pumpkin, sanma, and the smoky otoro was both creative and memorable. The uni was sweet, creamy, and melted in my mouth. I personally don't like pumpkin so they kindly substituted my pumpkin soup with a light-weight noodle soup. However, after trying my partner’s pumpkin soup, I instantly fell in love with it and regretted my decision! Each nigiri was fantastic, the dessert (cream cheese fig mochi dorayaki) was also extremely good (sorry Fukudome san I said I liked it the most :P Please don't close the restaurant).
I'm not an omakase expert, but I could really appreciate the modernality and creativity in the dishes comparing to other places I've tried, while maintaining high quality. The chef might appear serious, but he is very friendly and humorous, and we had a great time chatting with other guests. Can’t wait to come back and try...
