Very generous serving of noodles and ingredients! The al dente noodles were perfect and the broth was rich and flavourful. The ajitama ramen came with a selection of 6 free toppings - cabbage/bean sprouts, garlic, pork fat, bell peppers, ginger. You can ask for any combination of the toppings or all of them. As the eatery only has 10 seats, it can be a little stressful to eat fast so that others in the queue can get their turn. The store is located at a junction with many small eateries. Yojimbo in Jimbocho is an absolute must-try for mazemen lovers. The noodles are thick and chewy, the sauce is rich and savory, and the signature garlic-mayo (“garimayo”) topping takes it to another level — creamy, punchy, and addictive. The balance of flavor from the egg yolk, pork, and spices is perfect. The portion is generous, and the atmosphere is that classic Tokyo ramen-shop vibe: fast, energetic, and satisfying. If you’ve you ever had ramen jiro , then this place will feel familiar. However, they also serve a soupless version or an abura soba-esque (油そば) that is fantastic. That’s what I tried and it didn’t disappoint. The noodles were thick, the toppings plentiful, and the pork juicy and succulent. They also cover this thing with cheese, which adds a whole other element to it. It’s a lot, and very heavy, but so good. Definitely worth a try....
