This is a no kidding, fresh seafood restaurant, They have live seafood tanks that they get some of their dishes from. Of course, the large fish species aren't kept in live tanks, but what we did have was excellent. Everything we had was excellent and very fresh. The uni was the best we ever had (first sampling of uni in Japan for us). We've had fresh uni back in the States, but this by far, hands down, beats that. As you can see, we had a lot of dishes and were not disappointed. The wasabi was the real thing and came with a grater for us to get as much as we wanted. 先日、【鷹一】で素晴らしい刺身盛り合わせを堪能してきました。こちらの刺身盛り「竹」は本当に見事で、見た目にも美しく、味わいも格別でした。新鮮な平貝、カンパチ、ヒラメ、タコ、カツオ、さんま、そしてウニや中トロが揃った盛り合わせは、まさに贅沢の極みです。
平貝は繊細でクリーミーな味わいが印象的で、カンパチは脂ののり具合が絶妙でした。ヒラメの身はとろけるような食感で、タコのしっかりとした歯ごたえも良かったです。カツオは香ばしい燻製の香りが立ち、さんまは脂の乗りが程よく、口の中でじわりと旨味が広がります。
