I used to believe that vegetarian and vegan foods are nothing but terrible replications of meat while also being expensive, having limited options and other negative stereotypes, until I had the opportunity of dining at Sincere Co where they disproved these stereotypes entirely.
A small cozy place located on the ground floor of Moulmein Rise Shoppes, this restaurant offers a wide variety of vegetarian and vegan dishes from multiple cuisines, having something for everyone.
For starters I had the Miang Kam. A crunchy combination of peanuts, shallots, ginger and lime wrapped in betel leaves, this dish is an explosion of sweet, salty, spicy and citrusy flavors. I'd recommend this appetizer to anyone who enjoys the bold flavors Thai cuisine has to offer.
The next dish I had was the Crispy Fried Cauliflower, which I was skeptical of at first but upon trying it I was stunned by how similar it was to sweet and sour pork. The ultra crisp exterior, along with the nicely charred bell peppers and onions all coated in the sweet tangy sauce makes the whole dish come together beautifully. I definitely recommend ordering this, especially vegetarians who want to experience the same satisfaction of the Chinese dish we all know and love.
Next, I had the Soupy Rice with Tempura Tofu. Like it's name, it is a bowl of rice in a creamy fragrant broth served with tempura tofu and oyster mushrooms, a Japanese soft boiled egg and kailan. I really enjoyed this dish, the texture reminds me of a risotto, and all the accompaniments of the dish were prepared well. The mushrooms and tofu were golden brown and crispy, while the soy marinated soft boiled egg had a nice jammy yolk. The kailan, which is usually a very bitter vegetable wasn't bitter at all signifying the attention to detail put into the food here.
The next dish in line is Hainanese Mushroom Rice. While it might sound nothing close to Hainanese chicken rice, be ready to be proven wrong here. The mushrooms used here are monkey head mushrooms, deep fried and resembling Japanese chicken karaage. The mind-blowing part of this dish is the texture inside, it looks exactly like chicken and this is the closest chicken replica I've had so far. Even the flavoured rice which is vegetarian, retains the same flavor and aroma of the traditional dish though no chicken is used.
The fifth dish is a vegetarian Phat Krapow, or basil stir fry. Minced mushroom is used in place of meat, and while I don't think the texture resembles meat in any way the strong Thai basil flavors of the traditional dish are retained and I think it would be perfect for people who don't like meat. The fried egg served with it was also cooked perfectly, crispy at the edges and runny in the center.
Last but not least, I had the Smoked 'Konjac Salmon' Benedict. It consists of sourdough slices topped with "smoked salmon", spinach, poached eggs and a herb hollandaise. The faux salmon, made from konjac has a jelly-like texture with flavors of dill, and a slight smoky and fishy taste. When all components of the dish are eaten together it does resemble real smoked salmon as closely as I believe is possible. I did find the bread used too hard, making it a struggle to cut, and the poached eggs were slightly overcooked. But other than that, a good dish overall.
Sincere Co. has really changed my perspective on vegetarian food. As someone who has avoided vegetarian restaurants in the past I find myself eager to return and try out more vegetarian versions of the foods I love. The quality of ingredients and attention to detail are evident, it's clear the chef has alot of knowledge, experience and creativity to come up with these incredible dishes.
