Hokkien Mee topic will have many divided opinions, especially on where to get the best one. For me, I do not have a favourite ones nor I will purposely go and search for the best fried tai lok noodle with the dark sauce in town. I would normally go for convenience, and because Hokkien Mee is something that all the young ones can agree on.
This long standing Hokkien Mee restaurant has been around for the longest time, for as long as I remember. I used to come here for supper during college days, and then after clubbing during working days.
From having to sit along the kaki lima, now they have upgraded themselves by taking over few lots and renovated it into full-fledged restaurants complete with air-conditioners. Ordering is made via QR code so save the hassle of making wrong orders.
◾Hokkien Mee - just order the portion depending on the number of diners. Crispy pork lards were given but in limited quantity. Want more? Order extras at extra cost. Quality was decent - not enough wok hei (for me). The flavours somehow couldn't match the yesteryears. Nowadays foreign workers took over the frying job so... ◾Chef Onn Guangzhou Roast Duck - one of my perennial favourite spot for good roast duck. Crispy skin and juicy meat - I could just eat this for dinner alone. ◾Signature Fried Lala - delicious with fresh clams in slightly spicy sauce. ◾Fried Chicken Wing - the kids wanted fried chicken so fried chicken they got! ◾Pork Soup - we wanted something soupy and this fit the bill. Ingredients were generous however the pork was a bit starchy and I felt thirsty afterwards - MSG detected!

It's quite likely you'll see them chatting happily in a corner oblivious to all the patrons looking around for them.
We had to interrupt their chats just so we can pass our order to them. Even then, only half of our orders arrived although they keyed in all correctly. We had to look for them again and found 4 of them together chatting. Had to cancel the order by then but has to put up with one of the waiter's attitude.
I've no idea what sort of training or lack thereof the owners provided to them. I don't think he care from the look on his face. The business has been managing themselves pretty well without any direction anyway considering it's been driven by word of mouth + the strategic location.
