This places makes their own veggie noodles and it's very delicious. My favourite is their beetroot noodle!
I usually don't find veggie noodles to make much difference to the dishes I am eating. Whether it's veggie pasta or dried veggie noodles I can cook on my own.
But out of curiosity, I once selected the beetroot pan mee option at Ha Ha Siu because it is rare to find anything beetroot at Chinese shops 𤣠It has since been the only noodle I will order there.
This place actually serves a very solid pork noodle version of pan mee. The way they marinade the pork is very flavourful and reminiscent of old eateries style of marinade. So the soup base is moderately heavy on flavours as is. Their pork noodle is in fact superior to many other pork noodle specialty store.
But after adding the beetroot noodles, it adds a totally different dimension to the soup. Cutting through the heavy seasoning to give a beetroot sweetness to the soup. I really love it! I especially like the bittergourd pork soup combined with the beetroot noodles. Very good mix of pork and vegetable sweetness. Sometimes I even add an egg to it and it is just šÆ
However sometime mid to end last year, somehow the soup base has gotten even more heavily seasoned (I think it is from the meat marinade). And this was when I had to taper down my intake š„²
But I would highly recommend this place for freshly made veggie noodles. Their coriander noodles are good too. They even have coriander dumplings as well!
I really appreciate all the effort the boss puts into the noodle recipes. They have a very long list of items and customisations and add ons. There is almost bound to be something you would find yourself liking. I feel that the boss is very passionate in developing their recipes and has their a strong insistence in their quality and products. It's rare to find that. So do try out their uniquely crafted items!
Hope boss can finetune the flavours further and dial back a bit on the pork noodles...
