Biznaga in La Paz is one of those spots that immediately draws you in with its charm. The ambiance is effortlessly cool — a laid-back backyard bar vibe with stylish touches that make it perfect for a casual dinner or drinks with friends. From the moment we arrived, the atmosphere felt promising. Service started strong. The staff was attentive, friendly, and welcoming — it really felt like we were in for an exceptional evening. Unfortunately, that level of attentiveness dropped off sharply once the restaurant filled up. Despite having four waiters and a bartender on duty, it took 40 minutes for anyone to notice we had finished our meal, and another 20 minutes just to get the bill. A disappointing end to what began as a great experience. The food itself was a highlight, though a bit uneven. The tacos were the standout — tender steak with beans, a flavorful tartare, and a fun, bold twist with corn topped with Flamin’ Hot Cheetos. It was inventive and delicious. Sadly, the birria ramen we were excited to try was sold out, so we pivoted to the steak and fries, which landed flat and needed a serious boost of seasoning. Overall, Biznaga has a lot going for it — great vibes, creative food, and a setting that makes you want to linger. If the service had stayed consistent throughout the night and all the menu items were available, this could have been a five-star visit. This place is just incredible. It is, without exaggeration, one of the most delightful restaurants I've been to anywhere in the world. Hands down the best food I had anywhere in La Paz, and some of the best meals I've had ever. The dishes are novel, creative, and insanely flavorful, the space is beautiful and well-designed, and the staff are super sweet and attentive. We went back 4 times over the course of a 2-week visit because we just couldn't get enough. I will be sure to return any time I pass through La Paz in the future, and I'll be recommending it to anyone who visits! I almost never write reviews, but had to make an exception for this place because it is just that good.

My one complaint is that there are very few vegetarian dishes, which I feel like they could do super well given how brilliant the chef clearly is. But great pescatarian options because the fish dishes in particular are mind-blowing. The cocktails are also super unique and excellent without fail. Thanks to the chef and staff for all the...

Excellent service, the mixologist is on top of his game and the interior design is lovely. Really liked the flavors on the complimentary whipped hummus snack from the chef. The guacamole with hoisin-glazed chicharrones was the star of the meal, though the portion seemed like too much chicharron and not enough avocado. The food is fresh and pretty, but I do agree with the other local guide that the food plating outshines the flavor. I’ve had food just as fancy and fresh at these prices at Tatanka and Majagua, but with more flavor. There’s a subtle elegance to the food, which I think some people will like, but I personally like more complexity of flavors. The wine pours were also short—maybe 3 ounces in a glass instead of 4.5-5 ounces. We will definitely be back for cocktails and appetizers, but we will hold out a while longer on the rest of the menu. Just needs a few tweaks. I hope they make it. So...
