I am judging their pizza as a napoletana style, we tried the quattro formaggi pizza; the crust 7/10 (not puffed up enough at edges, gets soggy at center where it nearly disappears, tastewise ok), sugo 8/10 (not bad), the toppings 6/10, could have major improvents- the cheeses didn't blend really well, especially because the mix was overpowered by a cheap yellow American-style mozzarella (which totally dominated). As a result we couldn't taste any parmasan (if it was there at all), and gorgonzola just a bit. We were offered a homemade spicy mix of chillis with parsley in oil. This was not bad to try, but a good pizza napoletana doesn't really need it, in my opinion. When we asked for some olive oil, we were brought oil that was not even close to any olive oil I have ever tasted. Not even the cheap ones. They have various vegetarian options, creative takes, and fun specials! The service is fast and the pizza is always fresh. The chef (and owner?) is Italian and makes authentic and delicious pizza with perfect crust!
My favorite is the vegetarian pizza that comes with lots of veggies or the jitomate y arugula pizza which is so fresh and bursting with garlic. The pesto here is a bit disappointing. I’m a big pesto pizza fan but unfortunately that is the one thing that wasn’t great. They are very sparse with the pesto and it’s not fresh nor very flavorful so best to stick to tomato or bianca’s. The spaces are noisy, and while upstairs benefits from air conditioning (downstairs is open and there are the ovens, but more convivial) it feels largely like a blank slate in terms of decoration. The pizzas have a decent size (two might get away sharing one, depending on levels of appetite), but the prices for such a basic product are elevated. This is likely explained by the fact that they know they bake them better than virtually any other self-proclaimed pizzeria in Merida. Still don't necessarily expect the most authentic of ingredients or flavours. Choose wisely and you can enjoy some tasty slices.
