Guacamole - from what I experienced, guac in Mexico tends to be more of a creamy texture vs the chunkier style in the states. I'm unaware if that's the more traditional style but I do dig it! This was really top notch guac and it was served with a giant portion of tortilla chips.
Tártar Caribe - very light and refreshing dish that was as flavorful as it was beautiful.
Chilaquiles con Mole - EXCELLENT! I love chilaquiles but have never had it mole style and now that I have, I don't think I can have it any other way!! Far and away my favorite version I've ever had. Very pleasantly bold flavors in this one.
Carrot Cake - one of the BEST carrot cakes I've ever had. Super moist, fluffy, and the perfect level of sweetness. Texture and taste were top notch for this.
Chocolate Cake - one of the best chocolate cakes I've ever had! A good chocolate cake is hard to mess up, but a great chocolate cake is hard to come by. The chocolate in Mexico has nice deep rich notes to it that are unlike many other chocolates and it really helped elevate this from what would normally be a standard slice of chocolate cake anywhere else.
Service here was just as good as the food. Very friendly and accommodating despite us walking in very shortly before closing. Every dish came out as quickly as we ordered it. Salvei was one of my favorite spots throughout my entire trip in PDC! I wish I had enough stomach space to sample even more...
