This comment from a man who has been eating the best raw tuna in the world for many decades, right from the south pacific islands (Tahiti), and therefore a trusted connaisseur of raw fish.
Yugo's cook and the stuff there, who I talked too afterwards, have not THE LEAST IDEA how raw fish should taste and look like.
They better be do something else like serving ice-cream.
They "red tuna", which is NOT tuna but most likely bonite, is served many days old, as genuinely acknowledged by the cook (would you believe it...), whereas it should instead always be fresh from the very day.
The flesh looks dark brown instead of bright pink-red.
It did not taste good.
They did not have sticks, nor proper green tea.
The raw fish, as shwon to me by the cook, was kept in an ice-cream plastic recipient within a commercial coke self-distributor, opened on and off all the time, hardly what it takes to properly refrigerate any raw fish.

Commentaire d'un homme qui a dégusté à Tahiti le meilleur thon cru au monde pendant deux décennies.
Le cuisinier de Yugo et son équipe, auxquels nous nous sommes adressés, n'ont pas la moindre idée du goût et à quoi ressemble un bon thon rouge cru.
Le "thon rouge" qui est servi dans cet établissement n'en est pas, au mieux de la bonite.
Au surplus, il est servi vieux de plusieurs jours, ce qui, étonnamment, est confirmé par le chef lui-même, qui indique que les livraisons de poisson se font 2 fois par semaine ! Le croiriez-vous ? Alors qu'évidemment, tout thon rouge cru qui se respecte soit toujours être servi frais du jour même.
La chair était brun foncé au lieu d'un beau rose-rouge vif.
Ça n'avait pas bon goût.
Le thon cru, que j'ai donc demandé à voir de plus près, était conservé dans un récipient en plastique pour crème glacée dans un distributeur automatique de coke commercial, ouvert et refermé à tout bout de champ, contrairement aux conditions de froid nécessaires pour réfrigérer correctement le poisson cru.
Les portions, pour le prix, sont ridiculement petites, 60 grammes de poisson cru pour 10€, et donc beaucoup plus cher que dans les grandes métropoles occidentales et asiatiques.
Les avis positifs proviennent ou bien de consommateurs qui n'y ont pas mangé du poisson cru, ou bien qui ne savent pas à quoi ressemble vraiment du BON poisson cru.
