Castell Zuid — Restaurant in Amsterdam

Paid €34 for the worst tuna steak of my life. Most chefs cook tuna very lightly with a gentle sear on each side. This thick tuna steak was 75% grey, tough and dry with a thin pink centre (see photo). They did ask how I wanted the tuna and I said: “I defer to the chef to cook it as is recommended to taste best by the chef.” I then added: “I am accustomed to eating tuna almost raw.” And this was the result! However, my dining companions said they enjoyed the carpaccio starter with pesto, the lobster soup, the grilled sole (a large portion), tender ribs, and a steak. Note: The three sides cost extra, and were loaded with heavy, thick, gooey sauces rendering them all nearly inedible: a salad drenched in something resembling the texture of mayonnaise, a baked potato drowning in 1/3 cup of buttery cream sauce, and seasonal vegetables (asparagus) were swimming in a sea of viscous, heavy, yellow, buttery or cheesy liquid. If you love vats of dripping cream sauce on your vegetables, this restaurant is your perfect destination! The dessert and coffee was good. Hazelnut ice cream with caramel topping was tasty, with excellent decaf espresso. The brownie with ice cream and chocolate sauce was also enjoyable. I had a very good dinner at Castel Zuid in Amsterdam. The burrata was creamy and rich, with a lovely hint of truffle that made it special. The langoustine was fresh, tender, and perfectly prepared - you can really taste the quality of the ingredients.

The place itself has a nice atmosphere and feels stylish, though the outdoor seating by the street is a bit cramped and not the most comfortable. We also had to wait quite a while, which was a little inconvenient. Still, the location in Zuid is great, with lots of life around and a good vibe for an evening out.

We kwamen altijd graag bij Castell in het centrum van Amsterdam, dus besloten we voor het eerst de vestiging in Zuid te proberen. Helaas een grote tegenvaller.

Als voorgerecht hadden we carpaccio, maar deze was compleet overgoten met pesto waardoor het vooral enorm zout smaakte. Bovendien duurde het voorgerecht al lang, maar het werd nog erger: pas na anderhalf uur kwam ons hoofdgerecht.

We hadden een steak medium besteld, maar bij het aansnijden bleek deze nog rauw en zelfs koud van binnen. De serveerster nam het mee terug naar de keuken, maar de kok liet duidelijk blijken dat hij hier niet van gediend was. Het hele restaurant kon meegenieten van zijn gemopper, en tot overmaat van ramp voelde hij zelfs met zijn vingers aan het vlees. 🤢

Twintig minuten later kregen we dezelfde steak terug, maar dan volledig verschroeid. Dit hebben we direct teruggegeven en de rekening gevraagd.

Het enige positieve was de serveerster: zij was vriendelijk en zichtbaar ongemakkelijk met de situatie. De kok daarentegen leek er geen enkele zin in te hebben, wat de hele sfeer in het restaurant beïnvloedde. Misschien kan hij beter ergens werken waar hij wél plezier in zijn werk heeft.
