I should not have waited 3 weeks before writing this review because now the details are fading a bit, but on Aug. 12, 2023, my DH and I had the 10-course tasting menu and LOVED our experience. The ambience is quiet and elegant, but not stuffy or stiff. There was a mix of ages and levels of dress formality among the diners. This was nice because my DH and I did not bring any very dressy clothing to Norway (main purpose of trip was hiking). The ceilings were elaborate and historical and the rest of the decor was mostly traditional but with some unexpected paintings and objets d'art. We ate in a small room of 4 tables that sat between the main dining room and a private party room. I don't enjoy piped in muzak so I was glad that there was none. Having eaten at Eleven Madison and SingleThread within the last year, we had high expectations for a single Michelin star restaurant in Oslo like Statholdergaarden. The food did not disappoint. We would highlight the first five courses (mostly seafood themed) as being more exceptional than the quail or veal courses. The pre-appetizer / amuse bouche that included the little rye taco with crab mousse and avocado sauce was out of this world. The waiter said that little gem was the work of an intern. Well, coming from a place that loves tacos, crab and avocado (Northern California), I can say that the intern deserves a promotion. I remember that one bite more than anything else I ate that night! The service was wonderful and warm. We were served by a team of people with two main waiters who took turns telling us about the courses and conversing with us. They never seemed too busy to provide details and made us feel comfortable. My husband and I both felt that the 10-course menu was too much food and the 4-hour service a bit too long for our party of two.
