The friendliest cafe I have ever visited (and I've visited a lot!). It might not have the variety of coffees like the Starbuck Roastery in Seattle, but it is a great place to learn about coffee and various brewing techniques. Freshest coffee in the world (roasted by the cafe itself). Their coffee is a very light roast (Arabica Variety Bourbon or Bourbon/Caturra blend), from Alto Ihuamaca, San Ignacio, Cajamarca, Peru (grown at 1800 meters). I've never experienced a light roast like this. Using my standard Aeropress technique at home (20 grams beans, medium grind, 200 ml water at 180°F, 2 minutes brewing time), the result was an extremely sour brew. By lengthening the brew time (4-8 minutes), grinding fine, and lowering the temperature to 150°F, I was able to get a less sour brew with a fruity taste and even hints of chocolate. Read moreWalked in to get an americano to go. My wife ordered a flat white. We showed interest in their beans and the two baristas were very receptive. They let us sample a cold brew blend they were working on and i was immediately pulled into sniffing and buying some beans off them. Grabbed the dark that built the body of my americano as well as one of the mediums that may or may not have gone into the cold brew blend theyd let us sample. Short but sweet experience in here.
Shots pulled are balanced. Temperature is right. Proportion of base was balanced, brings the flavors out. I would believe they may have even pulled a lunggo into the water and a ristretto in the milk drink.
