We recently visited Masskara Chicken near NGC and found the place very crowded, which made for a busy atmosphere. We ordered Cansi, sisig, inasal paa (though unfortunately, petcho was unavailable), and 3 chicken liver inasal.
The food really tasted good and lived up to expectations, which we appreciated. However, the service left much to be desired. Our orders were taken by one waiter, but the food was delivered by a different staff member who didn’t make eye contact or acknowledge us—he simply placed the food on the far side of the table and left without a word. We chose to overlook this since we were quite hungry.
The timing of the dishes was frustrating. The rice arrived first, followed by the Cansi and sisig, but the inasal came nearly 25 minutes later. Most disappointing was the chicken liver inasal, which is usually quick to prepare. After waiting almost 45 minutes and multiple follow-ups, we were finally told that the kitchen never heard the order because of a miscommunication.
Because of the delayed serving of the chicken liver, my mom lost her appetite and wasn’t able to finish her food, as we had already finished eating by then and the liver was her main order.
While the staff explained the delays were due to the crowd and the way servers handle multiple tables, what we really needed was a simple apology instead of justifications. It seemed there was a lack of coordination between the servers and the kitchen, and this affected our dining experience. My aunt pointed out that better attention to each table and clear communication could help avoid these issues in the future.
Overall, we enjoyed the food, but we hope the management can improve service coordination and customer communication to match the quality of their dishes.

We came in past 12nn of Saturday, and there are families eating. They immediately accommodated our requests and orders, and waited for a few minutes, maybe around 20 before the food was served. Their resto was situated in a not so very busy place, but the ventilation was very nice.
Their Inasal Pecho-Pak was the biggest we've tried in Bacolod so far, so plus points for that. Their sisig wasn't so great, but the serving was right for two people. Their Pancit Canton Chicken though, was soooooo yummy I enjoyed it very much. It has a generous amount of meat and veggies tossed in savory sauce. The noodles too were perfectly cooked. Too bad I forgot to take a photo.
Yes, I will definitely return to this restaurant for their Pancit Canton. Don't sleep on this. BTW, they are one of the sponsors for 2024...
Read moreWe've had two days of chicken inasal. We first tried Chicken House which was highly recommended and so, should be a good basis to review the others. Next night we went to Masskara Chicken. Ordered the same- 2 pechos & 1 paa. Also ordered Sizzling Gambas. We were very disappointed with the gambas as it was not sizzling and the taste was sweet- more sweet and sour. The shrimps were not fresh and tasted like it was cooked for lunch earlier. Are the rest of the seafoods as disappointing as this? We dared not try. The pechos and paa were small compared to Chicken House's which were larger. They smelled good and tasted at first bite but after 3, the tastiness was gone. Chicken House was more consistent throughout the portions. We finished the food, except the gambas, and left without good memories of Masskara...
