I loved the vibe of this place. The live music created a lively atmosphere without being too loud, allowing for conversation while enjoying a meal.
Speaking of the food, I was pleasantly surprised by the quality. In fact, I found it to be even better than most of the authentic Filipino food I had tried during my trip in the Philippines. The grilled stuffed squid and Bicol express were particularly outstanding, bursting with flavor and cooked to perfection. The service was also commendable, with the staff being attentive and the cocktails arriving promptly.
The positive experience was so impressive that my partner and I decided to return to Sharky's just two days later. However, we did notice a slight decline in the overall quality and service. The staff seemed a bit slower, and unfortunately, the cocktails arrived with our food instead of beforehand. The rice we received was overcooked to the point of being a paste, which was disappointing. Despite these issues, the food itself remained excellent. The Sisig, in particular, stood out as the best I had tasted throughout my two-week trip, and the beef caldereta was also incredibly delicious.
Despite the minor downsides during my second visit, I still believe that Sharky's has something special going on. The food's consistently high quality and the inviting ambience make it a worthwhile dining destination in Coron. Friday night, around 6:30pm with a table of 3. It wasn’t busy and they had maybe 3-4 other tables that were being serviced with quite a large staff. That being said with such a large staff we shouldn’t have to flag down employees to get an order in, almost felt ignored. First drink was excellent and had great balance (Sharky’s granadilla) with a kick of jalapeño with passion fruit. I had to order a second round and the passion fruit was completely left out and quarter of the glass was filled with jalapeño smh. Then after, we waited quite some time to get the attention of the staff and must of raised my hands 3 or more times to place a food order.

Everyone’s food was decent and there wasn’t any complaints. Except for the chicken I ordered. First, I asked if it came with a side (fries or rice) and was told it is chicken only hence why I ordered loaded fries. The food arrives and it comes with salad, fries and 2 pieces of chicken 🙄. Secondly, I ordered the chicken since Filipinos always do fried chicken right. The chicken was hard and dry as jerky, I attempted to eat it and my jaw was exhausted after the first piece and gave up.
The idea and aesthetic of the restaurant is attractive but there’s too much going on inside from tattoos, salons, live music, and so forth.

As we waited for the food to arrive, we watched our plate of sisig do the musical chairs of the place until they finally worked out it was for us. By this point it was less than sizzling; a bit of a selling point, especially when there is a raw egg in the middle. We also ordered the grilled pork liempo, which you would think would arrive nice and hot, especially as served on a cast iron griddle. Nope. Just above room temperature. They also forgot one of the two portions of rice.
Overall, the food was very bland, greasy (we love a fatty pig, but that's not the same as greasy) relatively cold, with wilted lettuce to garnish (but very pretty edible flowers as well! It's not entirely a bad review). I let my Filipino partner have the portion of rice, and you know the rice must be bad when a Filipino doesn't want to finish it! Her remarks were that it was soggy and wet.
Upon asking for the bill, we were still charged for the rice they didn't give us, and overcharged us 40% more for one of our cocktails. Then tried to charge 10% service on these mistakes. After requesting the correct bill, they still charged 10% service. Call be old fashioned, but you shouldn't be charging a service fee when you know you've done a bad job!
