I am an avid foodie and traveller and found this place on Google while visiting Dumaguete. It had 4.5 stars and 174 reviews so definitely worth a visit.
Firstly I tried to order a Mojito and told no stock. That in fact the only cocktails they had were margaritas.
For food I started off ordering a chicken Caesar salad for 285P and the salad arrived first. The greens and veggies looked fresh and appetizing for sure. The portion size looked great as well. I was craving a good Caesar salad but unfortunately it was terrible.
The dressing used was some salty concoction that was not tangy or creamy, no Parmesan cheese. It was just bland and salty. I could not find any chicken in it and the bacon also tasted off. Soft, fatty not crispy. It was 1 star and actually had to refuse it. It was not edible. The waitress offered to replace it without dressing and that to me defeated the point of ordering a Caesar salad. It was an epic fail and I was very surprised. It’s an easy dish and a classic.
The next order was for simple fish and chips 320P. The fish portion was a very good sized and cut into bite sized chunks, the coating was crispy and served hot. It also came with a slice of lemon. The dip was an odd concoction of mayonnaise, mustard and lots of garlic from what I could taste. Doesn’t really pair with fried fish very well but wasn’t the end of the world. The fries were a very small amount that were served cold and under cooked and sprinkled with Parmesan cheese. I was prepared to give it 5 stars but the fries and dip bring it down to 3 stars sadly.
I expected more from this place that has been around for a few years and looks like fine dining. The cooks need some training I think and should taste their food from time to time.
I hope my review helps them improve. They look like they could have good potential for fine dining someday but the amateur cooking needs...

I really don't know how to characterize The Tres Bistro, but I guess maybe a combination of Italian and Filipino food I would say. It's located not far from the Silliman University 5-10 min by motorcycle from Rizal Boulevard. The ambience here is nice and welcoming and the interior has a classy touch.

The Tres Bistro offers different kind of meat, pastas, soups and salads in an Italian and Filipino style. They usually have many guest so obviously it's a popular place.
Pasta Tres Putanesca
When I was there a couple of days ago I ordered a Chicken Cordon Bleu but since it was not available I finally ended up with a pasta instead. It was the Tres Putanesca, spaghetti with meat sauce, anchovies, olives, mushrooms and capers. The portion was not really big for me, I could have eaten more since the pasta was very delicious. The spaghetti was "al dente" and the meat sauce had a rich and tasty flavor and had not the sweet taste which is so common here in the Philippines. On the other hand the two slices of garlic bread served together with the pasta had a rubbery and hard texture.
Conclusion
The food was great aside from the two slices of bread. Despite the two slices, my impression was that they use good and genuine ingredients for the food. The service was meticulous and they had more stuff on their menu that I would like to try. So I will definitely come back. I would have given a 5 for the food if it hadn't been for the two slices of bread accompanying the pasta.

In terms of experience, service here is quite excellent. Servers are attentive and friendly. Expected cooking time was 10-15 minutes but it arrived earlier than expected; though they served the main ahead of the starters, which was a little off.
Ordered the peppered steak (apparently one of the best-sellers), which was just okay for me. Expected more from the peppered steak than sauced up beef. We got the croquettes which were also okay - be warned though that one of the sauces was Sriracha sauce, a fact that the waitress forgot to mention until my companion ate it with a lot of sauce. We also got the bacon and cheese fries, which were good.
Me and my companion didn’t finish any of the dishes though - lack of appetite, and the A/C was hitting us directly so the food turned oily (ma-sebo) after a while.
Price-wise, the place is okay. Quite affordable for a night out.
Location is good as it’s close to downtown, near to Silliman, but a little outside the really busy pedestrian-heavy downtown restaurants. If you’re driving though, parking is very limited. You’ll have to park along Hibbard, or turn into a small dirt road where the restau says there’s “More Parking Inside”, while it’s actually just a space outside some building where you can apparently park at.
