Checked this out because of the positive reviews. Its chef was acknowledged to have the best Cheesecake in Spain in 2019 via his restaurant, Kava. Helmed by Fernando Alcala (whenever he's in Manila half of the year) and his Head Chef Ines Matera. Incidentally, Alcala's Kava in Spain made it to the 2020 Michelin Guide as Bib Gourmand which recognizes up and coming restaurants that offer reasonably priced dishes that are worth visiting.
Bolero is a new go-to restaurant at the GF of Verve Tower near High Street in BGC.
Upon ordering, we were given complimentary Parmesan Cookies that sort of introduced the Chef's creations in an outstanding way. Each bite spoke of quality ingredients executed well.
For this visit, we sampled their Ricotta with Green Onion Waffle (P570). This is one of the best starters I've tasted and an ode to the HK Egg waffle heightened by a ricotta dip with a zing of lemon cooled by mint. This spelled the start of our Bolero food adventure which really twirled and twerked our taste buds. We followed this up with Beef Empanadas (P590) made with a smoked ribeye flavor bomb. We also had their Skipjack Tuna, Ajoblanco and Grapes (P590). The combination of partially grilled or aburi flamed skipjack mixed with almond cream, grape and roe is another flavor spectacle. I felt the chef kept on throwing great punches that's making me a believer. As if this is not enough, when we sampled their Pork Dumplings with Moorish Tomato Dressing (P690) the chef made East meet West. This marries the Chinese pork dumpling with seasonings and herbs probably from the Basque region of Spain where the Moors situated themselves before. The tomatoes were smoked and spicy. Their Signature Potato Fries (P450) is super crispy confit cubed potatoes that are a delight to munch and accompany the mains we ordered.
For our mains, we started with the highly-acclaimed Iberian Pork chops (P1,460). A lot of reviews were saying that this was better than steak. I beg to differ. The quality of the pork was great but the volume of orders or fatigue may have caused the chef to forget how much seasoning or dry rub was applied because one order was fine while the other was overly salty. To the staff's credit they offered to have it corrected but we just opted to leave the half of one order untouched. We also had their Whole Grilled Chicken with Pumpkin Puree (P1,190). Chicken flavored with Dijon mustard is always a winner. Their Tuna Steak (P1,280) was grilled yellowjack and very Italian in taste and presentation with putanesca sauce and fried capers.
We really reserved room for the dish that made them famous...the Cheesecake (P490). Spoiler alert, it's not just hype. It could probably be one of the best if not the best cheesecake you'll have because of the oozing mascarpone/blue cheese center almost resembling lava in between a proper cheesy outer layer. Pure cheesiness! We also had their Lime, White Chocolate and Merengue (P360). This was a great foil to the 2 other desserts as it offered a tart respite that sort of balanced the richness of the others. Our last dessert was the Chocolate Fondant (P360) a hot 55% dark chocolate lava cake with vanilla ice cream. To cap it all off, we had Curtado and Spanish Latte.

My recent visit to Bolero in High Street BGC was nothing short of delightful. Upon entering, we were greeted warmly by the staff, who gave us the option of indoor seating or the outdoor patio. We opted for indoor seating and were shown to a lovely spot by the window with a fantastic view of High Street. The ambiance of the restaurant is both aesthetic and chic, with the perfect balance of style and comfort. The AC was set just right—cool enough to beat the humidity but not too cold. Background music played softly at a volume that didn’t interfere with conversation, adding to the overall relaxing atmosphere.
For our drinks, I ordered a hot latte and my friend opted for an iced Spanish latte. Both arrived quickly, and I was immediately struck by the rich aroma. The coffee was excellent—bold yet smooth with the perfect balance of beans and whole milk. The Spanish iced latte was particularly refreshing, with just the right amount of sweetness and creaminess. It was blended to perfection and was a refreshing treat in the warm weather.
Next came their famous cheesecake, which lived up to its reputation and more. The moment it was served, I could see the cheese oozing from it, and I prepared myself for what I knew would be an indulgent experience. One bite, and I was blown away. The cheesecake was incredibly creamy, with a flavor that had a surprising depth—almost like there was a hint of rum, giving it a unique, slightly liquor-y taste, reminiscent of Lindt’s rum chocolate. It was so good that we wanted to keep eating, but it was so rich and filling that we couldn’t finish it, even though we shared it.
The service was on par with my experiences at Wildflour Uptown Ritz—friendly, efficient, and highly professional. The staff was attentive without being intrusive, and everything was served promptly. Just like at Wildflour, the team at Bolero seemed well-trained and truly added to the overall positive experience.

It is crunchy outside and yet little moist inside. Bolero salad 3/5~ refreshing Steak 1/5 ~ chewy and bland Black rice 3/5 ~ good taste but little too runny for me. Then we gave in to the recommendation of our waiter Neil: we ordered the grilled pork chop. When it arrived, we noticed that there's more blood in between the bones and some flesh. We asked our waiter if this is usual? As far as we are concerned, we are NOT eating bloody pork meat. Our waiter apologized and said he would ask the kitchen to cook it more to our liking. Then everything crumbled! The tall skinny chef (Caucasian) started screaming, she said that it was supposed to be eaten that way. Our table was almost by the entrance, and yet we can hear everything she's saying. (she was literally screaming). We were turned off by her reaction. It was very unprofessional of her to react that way. We decided to just ignore her and continue with our conversation. But then, our appetite was spoiled.
Our server Niel tried his very best to provide with great service. But it wasn't his fault.
We will never set put our feet once again this establishment! If you think you are better than your customers, then you are in the wrong profession!
This place is not cheap either!
