It was not our first time when this restaurant was “on our radar”, as we visited the region one year before, and wanted to try it out. At that time, my girlfriend felt like the menu was focusing too much on fish, and I can fairly say that, one year later, wow, was she wrong :).

The location itself, whilst not very impressive from the outside, is very cozy and well designed on the inside, just perfect for a relaxed, yet memorable dining experience. The staff was very attentive and their English was spot on (I am Portuguese, but my girlfriend prefers English, so all of the dishes were explained and presented accordingly).

It’s not by chance that one of the menus was called the “Balanced” menu, as for us - who like fine dining, and are no strangers to 1 star Michelin restaurants, especially in Portugal - it was, perhaps, the most perfectly combined set of dishes we ever had. Chef Antonio Loureiro succeeded in designing the menu in such an incredible way, that every dish (and I do not exaggerate when saying EVERY dish) was as tasty as it comes. The flavors, the attention to detail, but most importantly, the selection of ingredients, were the things that impressed us most. Looking back, it was hard to pick just one dish that stood out…because we liked them all.

We had a diner for 6 people at A Cozinha in Guimarães.

This was a memorable, relaxed, evening to experience an exquisite trip through revisited portuguese flavors and food products. Vegetables, fruits, fish and meat well known of the north of Portugal were the basis for the complete meal. Tasty and visually appealing starters were the successful prelude for excellent starters and main courses. Finally, we still had a small space left to enjoy some shared desserts.

The wines list offered a large choice and we were very happy with a Dona Francisca (Douro, vinhas velhas).

The restaurant room space was very agreable and the attentive service was enjoyable. Of note, this was a very young team in the kitchen and doing the table service under the supervision of Antonio Loureiro.

Globally, this was my best food experience in a one star Michelin restaurant. There might be some bias here as I am portuguese charmed by flavors of my youth, but I honestly loved it.

I warmly recommend a visit to A Cozinha to enjoy the excellence of portuguese tastes. This restaurant combined with the vibrant atmosphere of Guimarães packed on its well preserved historical center is certainly...

Toujours difficile de porter une critique négative sur un établissement étoilé ... Pourtant, il s'agira, pour moi, d'une première à ce niveau là de cuisine. Aussi, il convient donc d'être précis et circonstancié :

Précisons qu'il s'agissait du menu de la Saint Sylvestre, le 31 décembre au soir donc.

Déçu par quoi ? Et bien, disons le tout net : les plats ne sont pas à la hauteur de ce que l'on attend d'une restaurant étoilé.

Pour exemples : les amuse-bouche sont sans saveur : ni le thon, ni la moule ne parviennent à éveiller les papilles... La présentation, voulue originale et "gastronomique" finit de plonger le client dans un abime de perpléxité sur le sens donné à tout cela.

Plus dommageable encore, un demi pâté en croûte, à la présentation quelconque, voir "campagnarde" se révèle écoeurant. L'observation de la table voisine et ma compagne confirment un échec total sur ce "plat". Mon voisin se force à finir, visiblement, surpris aussi de la faiblesse de l'assiette.

S'ensuit un calmar en lanières accompagné d'une sauce qui ne matche absolument pas avec le céphalopode.

Le crabe-crevette qui suit se révèlera être le seul plat qui se hisse au niveau minimum attendu. tout y est : accord des saveurs, sauce exellente.

On se met, alors, à espérer enfin le démarrage tant attendu !

Il n'en sera, malheureusement, rien ...

La truite fumée et le mullet viendront, à leur tour, se perdre dans la moyenne gustative du repas. Le dressage qui les accompagne s'avère également très très basique.

La vache et oursin, mélange typique portugais viande-"fruits de mer" devient le 3ème plat que je laisserai inachevé dans mon assiette, à grand regret. Dommage les feuilles de navet légèrement grillées étaient très bien préparées.

Enfin, le dessert achèvera de décevoir avec une glace noisette, accompagnée de petites boules de chocolat. Un mix plutôt agréable mais là encore indigne d'une étoile Michelin selon moi.

À noter l'attention particulière portée à l'accueil par un menu écrit en français sur la table.

A noter aussi un sans faute du sommelier qui aura sauver littéralement cette soirée de réveillon par un choix de vins de grande qualité. Merci à lui pour son grand professionalisme et son amour des vins !

CONCLUSION :

Certes, il convient de préciser que la cuisine portugaise à ses propres codes qui peuvent être déconcertants. On peut aussi arguer de la perception et de la préférence des goûts de chacun mais au risque de passer pour un client snobe ou "qui se la joue", je ne peux que rester extrêmement perplexe sur l'attribution d'une étoile Michelin à ce restaurant.

A titre personnel, je suis, là encore, surpris de la hauteur des notes attribuées. Espérons qu'elles l'ont été en toute sincérité et que les repas correspondant étaient de bien meilleure qualité que ce soir là.

Pourtant, le talent et le niveau théorique demandés pour obtenir cette distinction ne laissaient en rien imaginer un tel scénario, pas loin de la totale désillusion.

Si à cela, on ajoute que la salle de restauration est sans charme, voir "banale", les internautes avertis y réfléchiront à 2 fois avant de passer par cette case culinaire, qui s'annonçait, pourtant, exceptionnelle au vue du guide Michelin et du repas de...

At A Cozinha we enjoyed an amazing evening of perfection. One of the top Michelin experiences. The interior design of a very private indoor location and extravagant tableware give a great surrounding to the Chefs‘ and his team extraordinary dishes. If you want to expose yourself to the best, this is your place for extra fine dining. I adore the gigantic performance and what was delivered by António Loureiro and team. Creativity, phantastic products from local sources, passion and knowledge, perfect skills, thoughtful pairings with the wines, … were combined to a magic, beautiful and super delicious dinner experience. Thank you!!! A restaurant you would love to come back.

I should only have positive things to say about a Michelin- starred restaurant, but unfortunately, I have some negative comments. 1- when I made the reservation I told the person on the phone about our allergies etc, then I had to repeat the same information when they called back to confirm the reservation, and then a third time at the restaurant. 2- from the moment you walk in, the restaurant smells like public restrooms. 3- we were required to notify the waiter whenever we left the table. Food was delicious and everyone was courteous, including the chef, who came around to talk to each table at the end.

I should only have positive things to say about a Michelin- starred restaurant, but unfortunately, I have some negative comments. 1- when I made the reservation I told the person on the phone about our allergies etc, then I had to repeat the same information when they called back to confirm the reservation, and then a third time at the restaurant. 2- from the moment you walk in, the restaurant smells like public restrooms. 3- we were required to notify the waiter whenever we left the table.
