I'm giving this place 4 stars because I think they have potential and are definitely making an effort. The overall bowl of ramen was fine. Too ratio of noodles, meat, toppings and broth. Places to improve: Look up and use a soy egg marinade recipe. They're very simple and it will add a little something to the dish. Slow cook, sous vide or pressure cook the chashu and then very quickly sear it. It needs to be a LOT more tender to be in ramen. The tonkotsu broth isn't a rich bone broth. It has some flavour but it's not the rich, creamy texture you'd get from an emulsified bone broth. I really think if you change these 3 things, you'll go from fine to great.

This was our first visit to Chasu Ramen and we are already looking forward to our next visit. We have eaten at almost every ramen restaurant in Lisbon and this is in the top 2 (we need 2-3 more visits to try other items). The tonkotsu ramen was superb. The broth was amazing and the pork was so tender. Also the kikuragi (a type of mushroom) was a really nice addition. We also tried the chicken gyozas which were also very good. Can’t wait to go back! Excellent value for the portion and quality.

Chicken gyoza achieved just that right level of crunchiness and herby meatiness. A nice small filling portion. Sadly it was served without ra-yu chilli oil or vinegar - only soy sauce. I asked for chilli oil - what they had was orange coloured but with no chilli kick. I really missed the vinegar. So close! The Ramen was great - a good amount of very tasty pork. Again the broth could have been slightly thicker with more flavour, but overall I would go back.

This was our first visit to Chasu Ramen and we are already looking forward to our next visit. Now I know why the chairs are so low: they don't want you to see the horror behind the counter! First, horrible ventilation. The smell of burnt oil (probably rancid as well) is very present. The design is half way, in an attempt to create a Japanese vibe. Instead, few anime figurines on the counter and cheap flags only make it look...out of place, and im being very gentle here. Now the food: My God, frozen giyoza? Really bro? The external layer was semi fried semi...unprepared? 6 euros for nothing. Now, for the Ramen. Again, instant noodles from a bag, and 2 pieces of pork that looked very unappealing. The eggs were pre-made (eggs bro, just prepare new ones at the spot). God knows where it was before. Soup was tasteless and plain. I asked for the two dishes to come out together, but it didn't happen. No hard feelings, but its a big NO. Huge. Terrible! We arrived to the place and were the first ones inside, made an order of two ramens and one starter dish. Waited for around 25 minutes, during which time the food was being cooked with no kitchen hood working so we both got our clothes smelly with kitchen and cooking. We got the starters first, and according to the personnel, it was the reason why we did not get our ramens first and they cooked the first two ramens for a couple who arrived after us. When I asked why we did not get our ramens in the first place, I was told that as long as I was served the starter I could just wait for my turn for longer.
