As Lisbon has evolved, so too has my palate, particularly regarding Italian fare. Take their Carbonara, for instance — a classic dish that traditionally hinges on just four key ingredients. Yet, what I was served strayed far from authenticity, featuring a type of cheese that was neither Pecorino nor Parmesan, an unwarranted addition of cream, bacon in place of the essential guanciale, and a conspicuous absence of eggs. It was raining so I was waiting outside for it to stop. Couple minutes later a couple arrives and I noticed they get a seat and start ordering. I stand in aw, since the kitchen was closed how come they get to order? I get in to understand the situation and apparently they had a reservation. All good, so after all the kitchen was in fact open and I was lied to. I get the option to get a seat at this point (but no thank you, should have offered one at the beginning). Boy were we wrong. The staff was helpful, service minded, teamworking and enjoyable. I had the vegetarian pizza "Inferno", and I must say: it might be the best pizzas I've ever had.
