I asked for the enos specialty coffee. He weighed the coffee beans prior, changed the grind setting per a notebook according to the beans, ensured the grinder didn't have any retention by doing a dry run prior, weighed the water being poured into the pour over, and ensured consistent temperature by wasting a small amount of water to ensure the kettle spout was a consistent temperature as well.
