The YouTube videos of this place, and in particular the pizza I ordered, brought me here. If you've not seen them, search "Detroit pizza Seoul". I read they only make 30 of these pizzas a day, so I came for lunch on a Thursday and it was pretty quiet (2 other tables). Table configuration is either 2s or 4s. Seemed like they can seat around 50 covers at any one time.
The good:
a selection of beers and IPAs on tap, including my favourite Hoegaarden
an electronic order pad at every table with Korean and English language available, thought you can get a physical menu and order from the staff if you wish
an overall good pizza both in quality of bake and quality of ingredients. Good undercarriage and a nice caramelised crust
a nice presentation element of adding the short rib to the pizza.
The not so good:
The crumb was peculiar. While not as thick as your average deep dish, it was dense (not many air bubbles) but it still managed to be light on the stomach, however, it looked almost like a wholemeal flour.
The short rib, while tender and juicy was not as well cooked or presented as in the YouTube videos. The meat was a little greyer, there was a lack of flavour in the meat alone but the BBQ sauce brought the flavour to life with a nice sweet (but not too sweet), smokey profile.
this is a pizza bianca (no tomato sauce, just a cheese base) and underneath the short rib, the toppings are jalapeno, green peppers, what appeared to be some sort of red pepper flakes and chunks of white onion. Whatever your purist views on pizza toppings and styles like Chicago and Detroit deep dish, can we agree white onion doesn't belong on pizza?
