During my recent trip to Seoul, I found myself wandering near Samsung Station and the bustling COEX area, looking for a place to grab lunch. Amidst all the options, I stumbled upon a cozy Korean restaurant tucked away in a side street. Little did I know, this random choice would lead me to a meal I’d never forget.

The dish that stole my heart? Kimchi Jjim.

The staff recommended it as a local favorite, and I decided to give it a try. When the dish arrived, the vibrant red of the simmering kimchi stew immediately caught my eye. It was served in a hot stone pot, bubbling and aromatic, with perfectly tender pork nestled in the rich, spicy broth.
