In the labyrinthine alleys of Bilbao's Casco Viejo, where the aroma of centuries past mingles with the buzz of modern life, I stumbled upon a gem hidden in plain sight – a pincho bar that beckoned with promises of culinary delight. This serendipitous encounter led me to an unexpected rendezvous with Basque gastronomy at its finest.

Now, let me tell you about this place. Tucked away from the touristy throngs, it exuded an unpretentious charm that instantly won me over. No fancy signage or neon lights, just a humble façade inviting the curious wanderer to step inside and embark on a culinary adventure.

As I crossed the threshold, the air was alive with the sizzle of meats on the grill and the tantalizing aromas of spices mingling in perfect harmony. The atmosphere was lively yet laid-back, with locals and visitors alike swapping stories over glasses of Txakoli and plates piled high with delectable pinchos.

And oh, those pinchos! Each bite was a revelation – a symphony of flavors dancing on my palate, each more tantalizing than the last. From succulent sausage rolled in crust to delicate slices of jamón ibérico resting atop croquets, every morsel was a testament to the culinary prowess of the Basque people.

But amidst this feast for the senses, there was one misstep that left a sour taste in my mouth – quite literally. The cheesecake, touted as a sweet finale to the savory extravaganza, fell flat on its face. Now, I can almost consider myself a cheesecake expert and I'm no stranger to culinary experiments, but this sorry excuse for a dessert had me questioning my own existence. It was as if someone had taken a perfectly good cheesecake and subjected it to a cruel and unusual punishment. Trust me, my friends, this abomination should be struck from the menu with immediate effect.

Nevertheless, let's not allow one misstep to overshadow the brilliance of the rest. For in this unassuming pincho bar nestled in the heart of Casco Viejo, I found not just a meal, but a celebration of life, love, and the pursuit of gastronomic bliss. So if you ever find yourself wandering the streets of Bilbao, do yourself a favor and seek out this culinary oasis. Just do me a favor and don't order...

After 30 minutes in a line... We got to be the next new table. We were right behind the people that just got a table and we had people waiting behind us. When we finally got the next free table. She told us to leave because there were people waiting at an otherspot who came 10 minutes after us.. than she started yelling at us. First of all it would be nice if she would remember the people waiting. 2nd if not then stick with your line 3 if you really want us to leave.. ask us nicely and excuse yourself and suggest to give us to next table. Instead she made us feel like rude people. But we couldn’t have done it better...

Their pintxos calientes are so good! The carrilleras (iberico cheeks) were so good, we came back for a second portion to end our pintxos night! One of their specials it the foie gras with sheep cheese brioche and it’s honestly great but a bit too fatty for me. The iberico cheeks with mashed truffle potatoes was my favorite from all surrounding pintxos bars - hands down! You NEED to try! Also, the staff were very friendly and also super fun. They made jokes and were in such a great mood despite the crowds and busy hours! Will def come back!

It was here we were introduced to pintxos. Pintxos are small, skewered snacks or appetizers that are popular in Spain. They are typically made with a variety of ingredients, such as meat, fish, cheese, vegetables, and bread. Pintxos are often served with a toothpick or small fork, and they are meant to be shared. The best way to describe our total experience from the food, wine, service and atmosphere is we went back not one but two more times after our initial experience! The location is great for people watching and relaxing as well.
