Exceptional service and food. This has to be a top 3 restaurant on any list. Every dish arrived perfectly plated, delicious in unexpected ways, and the flow was perfectly orchestrated.

Due to a tight travel schedule, we presented a unique challenge to the restaurant staff upon arrival. We only had ONE hour to get through the 15 course lunch menu. The waiter initially didn't think it was possible, but promised to try.

Success! The crew worked in overdrive to deliver every dish one after another in the one hour timeframe. We didn't feel entitled to perfect service or even a full meal, yet they delivered.

One of the more positive surprises was that the waiter noticed I was eating left-handed, and offered to adjust the placement of the utensils. Wow!

Israel Ramos is one of the rising stars in the Spanish culinary scene. After having experimented eight years in his "gastrobar" Albalá, the Jerezian chef created his master piece in Mantúa. At the time of writing this review (Sep 2019), there is absolutely no doubt that he will obtain his first Michelin star on 20 Nov this year. He combines very creative, perfectly elaborated and extremely well balanced dishes, all based on local traditions and ingredients, with a very personal touch of bringing most plates personally to the restaurant. This restaurant is truly exceptional and delightful. Its Michelin star is well-deserved. We've been to many higher-end restaurants across Europe and the US, but few match the calming, intimate vibe of this place. Pese a ser cena, opte por el menú largo (Menú Caliza) con maridaje Mantua. El local no es muy grande y tiene pocas mesas, pese a no tener ventanas al exterior, esta bien iluminado. La oferta gastronómica son don menús, arcilla y caliza, que puedes maridar con vinos de Jerez o vinos elegidos por el sumiller. El menú, consta de veinte pases, comienza con seis platos de bocado, que se podían considerar aperitivos, de los que destaco dos, el corte de cecina y queso payoyo y el buñuelo de ortiguilla, puro sabor a mar. Los seis siguientes serian los entrantes del que destaco el cogollo a la brasa con caldo reducido de alubias, me recordó a las alubias de Gernika que preparaba mi abuela en el kaserio. Continuamos con dos pescados y dos carnes. El pulpo con una cocción perfecta y el lomo de jabalí se deshace el la boca. Terminamos con un prepostre y tres postres. La atención en mesa es perfecta, explicando cada plato y cada vino. Los caldos y las salsas están muy reducidas, son muy golosas y con sabores muy potentes y definidos. En este punto quiero romper una lanza, no solo por este local si no, por todos los locales que ofrecen este tipo de propuestas gastronómicas. Yo, a comer, voy a casa de mi madre, a este tipo de restaurantes voy a disfrutar, con platos que tienen seis u ocho elaboraciones (o simplemente dos), en los que un caldo o salsa tiene muchos ingredientes y varias horas de reducción a fuego lento. Por eso, antes de dar una opinión o valorar un local como “pésimo”, hay que saber que hay detrás de cada plato.

Pese a ser cena, opte por el menú largo (Menú Caliza) con maridaje Mantua. El local no es muy grande y tiene pocas mesas, pese a no tener ventanas al exterior, esta bien iluminado. La oferta gastronómica son don menús, arcilla y caliza, que puedes maridar con vinos de Jerez o vinos elegidos por el sumiller. El menú, consta de veinte pases, comienza con seis platos de bocado, que se podían considerar aperitivos, de los que destaco dos, el corte de cecina y queso payoyo y el buñuelo de ortiguilla, puro sabor a mar.
