El Toril | Hamburguesería Madrid — Restaurant in Madrid

Ayer tuvimos el placer de conocer a Luis, el encargado de El Toril y de probar sus hamburguesas. Hemos visitado varios sitios en Madrid antes, y puedo decir que la calidad y artesanía que hay en el Toril es de lo mejor que he probado en España y fuera de ella. Como gallego sé apreciar la buena carne, y la que sirve El Toril, con unos 16 días de maceración, es una carne muy jugosa, con una relación grasa y carne magra muy muy buena, nada que objetarle, esta tierna y con un punto muy bien pillado en cocina. Probé dos de sus hamburguesas: Su doble smash, 2 carnes de 110g si no recuerdo mal, hecha con una técnica más old school y propia; no es una ultrasmash, si no que es una carne más gordita con la técnica bien aplicada, crujiente por fuera pero tierna y roja por dentro. Particularmente creo que está muy bien que se salga de la moda actual de ultrasmash pero aquí ya para gustos colores.

La old fashion: Espectacular. Carne más gordita, de 220g creo recordar, extra tierna, evidentemente más que la doble smash. El crunchy del bacon con lo tierno de la carne se hace súper agradable al paladar, con una salsa inspirada en el cocktail americano old fashion que, sinceramente está de muerte. El queso riquísimo también, nada que objetar y un pan de los mejores que he probado en hamburgueseria, muy cuidado también este aspecto por Luis, que lo elabora también con receta propia.

Algo que se pueda mejorar: Creo que en las patatas hay campo de mejora. No están malas pero tampoco las pondría por encima de la competencia. Podría haber distintas opciones más dulces, con distintos toques de picante, etc. y quizás que resultaran más caseras.

En general 5 estrellas para Luis y su equipo. El Toril nos ha dejado un feliz recuerdo y sin duda repetiremos hasta probar...

Double Smashed Burger was really tasty, not the best I’ve ever had though. Prices are a bit high but not exceedingly high.

It’s worth to mention that you’ll be served in a common food court. High chairs and metal tables that can accommodate up to four or five people give or take. Place itself has a great atmosphere to enjoy.

It was a bit off that there was only one person that did everything and I mean it literally, he was taking orders and payments, then he jumped to the grill and deep frier, plating and serving customers at their tables, however he was very polite and...

This place is incredible, just like their staff from the waitresses, the chef and the owner.

I highly recommend Tequeños with two perfect sauces to enjoy them. Then the Smash Burger, the meat perfectly cooked, the French frieds with the kind of crisp I love. Just WOW!!

And you cannot definitely leave without having a taste of their brownie with ice cream. Just be aware is not just some regular brownie with regular ice cream, but a brownie that will continue to help to discover even more flavours, and the ice cream, it was Pistachio, just an Amazing...
