La Cocina de Gucho — Restaurant in Madrid

I travel in Europe fairly frequently and work to find out of the way restaurants that offer authentic experiences. I have a lot of really great meals this way and every once in a while I have an evening that is really special. That was the evening my wife and and I had La Covina de Gucho. It was a truly extraordinary meal and experience. This is a really cool neighborhood spot where you won’t run into many tourists and where a little Español is very helpful. Chef Javier displayed an impressive spread of foods and each course was delicious and unique in its own way. Highlighted the best of Spanish cuisine! He also had a vast knowledge of local wine pairings and could tell you from which region in Spain each wine was and who grew it. The chef also experiments with the menu often and each dish is hand crafted and held to his high taste and standards. An amazing dining experience. We were tourists in Madrid and this was by far our best meal and wine pairing. Javier the owner and his staff were incredible. The food was insanely good--we ordered the clams with garlic, the asparagus, squid, and other Spanish dishes that blew us away. This restaurant is incredibly authentic to Spanish hospitality and culture. As a small neighborhood joint you would never expect how phenomenal the wine is either.
