If you go at lunch, the first thing you notice is the large hissing pressure cooker in the corner of the shop. It's quite menacing; some patrons asked to be reseated away from it. It also warns of the ridiculous richness of this ramen; this is by far the richest ramen I've had anywhere. It's certainly good, but pretty much every time I eat here, I get a stomach ache the day after. The next time I go I'm planning on asking for less oil and back fat. The soup is very porky, rich, and creamy; it feels like biting into a chunk of pork belly. Finely chopped pork back fat (seabura) permeates every spoonful, giving the soup a viscosity that you don't get in many shops. Normally, the ramen comes with thick noodles, but I recommend asking for thin noodles. They're better suited to carrying the soup and fat with each slurp. The noodles are on the softer side of my preference (I prefer slightly firmer noodles) but are still pretty good. The toppings here are great. The lettuce is the perfect texture and has good shape for scooping soup and fat. Green onions and minced onions cut through the fattiness occasionally, but there isn't actually that much so the ramen is still ridiculously rich. The chashu is cold, quite lean and tender, good for soaking in the soup then biting once it heats up a little. It balances with and adds texture to the the richness below.

Their sea flavor is very good. It uses the same tonkotsu broth as the standard bowl but adds either niboshi, katsuobushi, or both to it, sort of like a tonkotsu gyokai soup. The flavor is primarily tonkotsu but with a strong accent of fish flavors. I asked for this bowl to have less oil, and though it was still very oily and thick, it was balanced enough for me to finish the soup. +++ High Recommendation +++

I myself ordered the Fish Flavour Soup (see picture), but also tried the Spicy and Standard Version on this day. In my opinion the standard version was the best.

The broth is incredible creamy and had so much body to it. It felt like drinking heavy cream, a pure pleasure. The taste was very balanced, no off-flavours at all. Despite the thickness of the broth, the pork taste was not too strong, but still strong enough. One of the best ramen broths I had so far.

The chashu was soft and good, but not as outstanding as the broth. The egg was sublime.

When ordering, you can choose the amount of aroma oil. I chose 30%. For me that was perfect. As the broth is already quite rich, i did not need more fat in my bowl.

You can also choose the noodle thickness. Default setting is thick. The thick noodles I had were great. They were as chewy as ramen noodles are supposed to be like. However, I would recommend choosing the thin noodles as they usually carry more broth when slurping and are in general a better match for such thick broths.

Overall that bowl of ramen was outstanding and takes a place in my top 3. I highly recommend this place to any...

山嵐是北海道的拉麵店,但有別於北海道特色走的是豚骨背脂為主打!

山嵐原本的本店是忠孝店,但是那邊因為租約的關係搬遷到已閉店的小川家原址位置。 店內配置也跟小川家當時的配置有一點差異,不過還是保有小川家當時硬體的一些問題(如:冷氣)...(苦笑

我們去的時間到離開現場都還是有麵友在排隊等待吃麵,不難看得出山嵐的魅力所在! 那天山嵐的台灣社長島村先生也在店內內場鎮守品質把關。 然後跟新科山嵐王椪柑一起吃麵,所以也被社長認了出來最後還有幸一起合照~ 只能說椪柑真的是全台最強洗碗工,無誤!(笑

因為本身不太吃辣,所以這次就點了還沒嘗試過的海湯試試味道。 同行有人剛好有人點[0背脂]的白湯版本,總算讓我感受到背脂在山嵐湯內原來是多麼重要的靈魂!

能把一碗麵一個味道好好堅持,好吃、穩定、安心,我想這就是一個職人想傳達的。 不論是小川還是山嵐社長,都是讓我這樣覺得!

▎海湯拉麵(細麵清爽減脂版本):

先說一下我喝到的0背脂白湯版本,湯頭少了背脂的滑順,真的相形之下就失去山嵐的特色。 不過原湯的味道真的奶味感十足,這也是和其他家湯頭最大的差異。

海湯的部分剛好同行的椪柑也點了0背脂,其實少了背脂魚介粉都會下沉,所以看起來就很像白湯... 我的有30%的背脂,所以呈現就是大家比較常看到的海湯樣貌。

湯的味道主要類似柴魚的味道為主體,白湯的味道則為輔助。 如果喜歡這味道的麵友就會很愛,不過跟一般的常見的豚骨魚介又不同,可以說是一碗山嵐特色的味道。

麵體細麵軟硬度剛剛好,搭配高麗菜中和海湯的味道這碗一下子就吃完了~ 叉燒肉一樣和外表不一的軟嫩好吃,這也是山嵐很特別的地方!

山嵐的麵看似樸實,卻保有自己驕傲的特色和味道,這次讓我再度感受到山嵐的魅力~...

The soup is very porky, rich, and creamy; it feels like biting into a chunk of pork belly. Finely chopped pork back fat (seabura) permeates every spoonful, giving the soup a viscosity that you don't get in many shops. Normally, the ramen comes with thick noodles, but I recommend asking for thin noodles. They're better suited to carrying the soup and fat with each slurp. The noodles are on the softer side of my preference (I prefer slightly firmer noodles) but are still pretty good. The toppings here are great. The lettuce is the perfect texture and has good shape for scooping soup and fat. Green onions and minced onions cut through the fattiness occasionally, but there isn't actually that much so the ramen is still ridiculously rich. The chashu is cold, quite lean and tender, good for soaking in the soup then biting once it heats up a little. It balances with and adds texture to the the richness below. Their sea flavor is very good. It uses the same tonkotsu broth as the standard bowl but adds either niboshi, katsuobushi, or both to it, sort of like a tonkotsu gyokai soup. The flavor is primarily tonkotsu but with a strong accent of fish flavors. I asked for this bowl to have less oil, and though it was still very oily and thick, it was balanced enough for me to finish the soup. Yamaarashi also serves tsukemen, and I feel like this sea soup is very suited to being tsukemen because of its higher salinity.

★拉麵迷請進→FB搜尋:『台灣拉麵愛好會』 [寫在食記前]山嵐特色 山嵐是北海道的拉麵店,但有別於北海道特色走的是豚骨背脂為主打! 山嵐的湯頭加入大量的背脂,湯頭可以明顯看出來其特色。 但是卻不感到油膩且順口好喝到想把湯乾掉碗底朝天,就是山嵐最強的地方,很魔性的魅力! 因此也累積不少鐵粉,『山嵐最高!』就是鐵粉山嵐王的精神標語。 此外也針對台灣的口味做調整開發出:背脂減量的清爽版本! 看似簡單卻又做出如此不簡單的湯,這就是山嵐。 ▎店家:山嵐拉麵 台灣總店 ▎區域/鄰近地點:台北市/捷運古亭站出口3 ▎用餐時間:7/4(四) 19:30 ▎排隊狀況:有,約10分 ▎拉麵名稱/價格:海湯拉麵/260 ▎配置:細麵、清爽減脂版本 ▎延伸:#跟著椪柑一起檻 #今天我是山嵐王 #小型麵聚 ★門口旁買完食劵店員會安排入座 ★食劵機上可以直接選取客製化版本 ★「5回優惠卡」活動企劃ing 山嵐原本的本店是忠孝店,但是那邊因為租約的關係搬遷到已閉店的小川家原址位置。 店內配置也跟小川家當時的配置有一點差異,不過還是保有小川家當時硬體的一些問題(如:冷氣)...(苦笑 我們去的時間到離開現場都還是有麵友在排隊等待吃麵,不難看得出山嵐的魅力所在! 那天山嵐的台灣社長島村先生也在店內內場鎮守品質把關。 然後跟新科山嵐王椪柑一起吃麵,所以也被社長認了出來最後還有幸一起合照~ 只能說椪柑真的是全台最強洗碗工,無誤!(笑 因為本身不太吃辣,所以這次就點了還沒嘗試過的海湯試試味道。 同行有人剛好有人點[0背脂]的白湯版本,總算讓我感受到背脂在山嵐湯內原來是多麼重要的靈魂! 能把一碗麵一個味道好好堅持,好吃、穩定、安心,我想這就是一個職人想傳達的。 不論是小川還是山嵐社長,都是讓我這樣覺得! ▎海湯拉麵(細麵清爽減脂版本): 先說一下我喝到的0背脂白湯版本,湯頭少了背脂的滑順,真的相形之下就失去山嵐的特色。 不過原湯的味道真的奶味感十足,這也是和其他家湯頭最大的差異。 海湯的部分剛好同行的椪柑也點了0背脂,其實少了背脂魚介粉都會下沉,所以看起來就很像白湯... 我的有30%的背脂,所以呈現就是大家比較常看到的海湯樣貌。 湯的味道主要類似柴魚的味道為主體,白湯的味道則為輔助。 如果喜歡這味道的麵友就會很愛,不過跟一般的常見的豚骨魚介又不同,可以說是一碗山嵐特色的味道。 麵體細麵軟硬度剛剛好,搭配高麗菜中和海湯的味道這碗一下子就吃完了~ 叉燒肉一樣和外表不一的軟嫩好吃,這也是山嵐很特別的地方! 山嵐的麵看似樸實,卻保有自己驕傲的特色和味道,這次讓我再度感受到山嵐的魅力~ :D ▎紅の味噌豚骨拉麵: 這碗的湯的油脂相對少很多,所以寫女性大好評應該這原因是其一。 湯頭味噌的味道其實不明顯,比較像是陪襯山嵐的豚骨湯。 然後微辛的辣度應該有再調整過,我不太能吃辣的我覺得這樣剛剛好,是舒服且好吃的辣感,也不會噴一堆汗的那種。 奶味明顯滑順且帶有辣的感受和香氣就是這碗的呈現~ 麵條搭配是細麵,軟硬度上適中且保有齒切口感。 叉燒肉有兩片,看肉的切面本來以為會有點乾柴,結果一吃很軟嫩好吃讓我意外的驚豔! 配菜高麗菜可以舒緩辣的感受,讓味覺的可以舒緩。 整體是碗很好吃也有特色的麵,不過整體份量預設偏少所以食量大的麵友可能要考慮加麵。

2024/07/11 晚上19:45分進店,不得不說完全退化成我在台北吃過的最難吃日拉,點了100%日本原味,結果湯沒味道,反而突顯油的存在感,變成一碗油味極重的拉麵。 你們可能要看一下醬汁比例是不是有問題⋯ 之前吃都還很正常,唯獨今天爛到值得發評論。 對了店裡的冷氣水管還破掉不斷漏水,連氣氛都剩一星。 2024年7月11日の夜19時45分にお店に行きましたが、正直に言って、これまで台北で食べた中で一番まずいラーメンでした。「100%日本の本来の味」を注文しましたが、スープに味がなく、油っぽさが際立ち、一杯の油っぽいラーメンになってしまいました。 タレの配分に問題があるのではないかと思います…。以前食べたときは普通でしたが、今日だけは酷くてレビューを書く価値がありました。 ちなみに、店内のエアコンの水管が壊れていて、絶えず水漏れしており、雰囲気も星一つしか残っていませんでした。 --------------------------------------------------------------------------------------------- 2024/07/16 回覆 非常感謝對我這種無名小卒的發言採取店內檢視,如上所述,這並非第一次點蔥爆彈來吃,印象中那碗美味的蔥爆彈,是在2016年時於大安區光武里的店面吃到,當時師傅還是日本來的,印象相當深刻。 回到現在,既然您已打包票表示絕對不可能有錯誤,只能表示如同貴店所說,口味這種事很主觀,因此我對我說的話負責,我個人認為的不好吃的東西就是不好吃,我並沒有否定貴店人員一心一意的工作態度,只是努力和東西好不好吃並不適用於同一概念,希望不要偷換概念一概而論,您可以從我的評分看出,僅在我認為有不妥的部分(餐點&氣氛)給上低分,服務上給予滿分並不失公允。 網路世界本身就是自由發表,為此該篇留言到此為止,我既不會刪除也不會更改,也不需要特殊對待,值得去吃的美食,值得自己付出。 (雖然不知道目前還有沒有日本的經營者,但我盡可能用我殘破的日文一併附上。) 2024年7月16日返信 この度は、無名の一利用者の意見に対して店内検査を行っていただき、誠にありがとうございます。上記の通り、今回が初めて「ねぎばくだん」を注文したわけではなく、美味しかった「ねぎばくだん」の記憶は2016年に大安区光武里の店舗で頂いたもので、当時の職人は日本から来ていたことをよく覚えています。 今に戻って、貴店が絶対に間違いないと断言されたことに対して、私の意見もまた主観的なものであることを理解しております。ですから、自分の発言に責任を持ち、自身が美味しくないと思ったものはやはり美味しくないと感じます。貴店のスタッフの真心込めた仕事態度を否定するものではありません。ただ、努力と美味しいは同じ概念にはならないということをお伝えしたいと思います。私の評価をご覧いただければ、不満を感じた部分(料理と雰囲気)に対して低い評価をし、公正にサービスに対して満点を与えたことが分かるかと思います。 インターネットの世界は自由な発言が基本ですので、このコメントをこれ以上変更したり削除したりするつもりはありません、特別扱いも必要ありません。美味しい食べ物は、それ自体が価値を証明します。
