喜愛生活革命的新加坡在台插旗潮流自然酒 #台VLT
二訪前衛美食酒吧,來自新加坡的WineRVLT,曾經被倫敦權威英文媒體《Evening Standard》評選為「新加坡 12 家最佳酒吧」之一 託藍區好夥伴們的揪團晚餐,這間號稱要掀起餐桌革命的酒吧,的確隨性好玩好吃,選擇一系列丹麥頂級家具品牌 Fritz HansenTM,牆上有各種范特西的畫作~
酒款主打在於一系列琳瑯滿目以最低人為干預,有機或生物動力法製作的自然葡萄酒。
新加坡行政主廚Sunny掌舵,主打豪華「X.O.龍蝦麵」。這道菜的麵體與醬汁全由主廚純手工製作。X.O.醬是經典粵菜的靈魂,將乾蝦和干貝醃製至少兩小時,刨絲磨碎後分別乾炒,再加入蔥、蒜、昆布、伊比利亞火腿及辣椒等香料共同炒香。經過至少三小時的精心烹煮,最終與龍蝦完美融合,帶來爆炸性的鮮美滋味。焦化奶油油封波士頓龍蝦,豐富其多汁口感與嚼勁,最後淋上主廚自製的X.O.醬與奶油,整體風味更加濃郁~ 這道華麗又好吃,必須說餐酒館的風味記憶,醬料的層次就是主廚的品味!
X.O.龍蝦麵 自製酸種麵包|昆布奶油+橄欖油,昆布香氣和麵香融在嘴裡超迷人! 雞肉沙嗲|台灣土雞松阪+花生辣醬,肉質彈牙,花生辣醬很吸睛 新加坡辣椒軟殼蟹|軟殼蟹蟹肉+馬鈴薯+炸小饅頭,新加坡菜控必點招牌,整桌喝采! 雞肝慕斯|油煎酸麵包+醃漬洋蔥,自然酒絕配! 仁當牛肉|和牛頰+翠玉米糕+綠莎莎醬,有點鹹,但莎莎醬刷出豐富口感 招牌派對雞塊|20塊,全台最好吃雞塊 孢子甘藍|南瓜鷹嘴豆泥+羽衣甘藍+醃製紫高麗菜+炸穀物+蜂蜜巴薩米克醋

Headed by Singaporean Executive Chef Sunny, the star dish here is the luxurious X.O. Lobster Noodles. The noodles and sauce are 100% handmade by the chef. The X.O. sauce — the soul of Cantonese flavors — is a labor of love: dried shrimp and scallops are marinated for two hours, shredded and stir-fried separately, then blended with scallions, garlic, kelp, Iberico ham, and chilies. After three hours of simmering, it’s fused with tender Boston lobster, butter-poached for that juicy chew. Topped with chef’s special butter and X.O. sauce — rich, bold, unforgettable. Service was very good. The manager (or owner?) is knowledgeable and he was on point with recommendations - he is very patient in walking you through the wine list. The menu is based on empty bottles on the wall, which was cool.
Selection is diverse, with offerings from regions across the globe.
Would recommend going with a group as the by the glass list is limited. However, bottle pricing is very fair - often lower than what i would pay at bars/restaurants in large US cities.
