印象中的彭園都是應酬場,所以桌菜一上以前一直以為它是間台菜,當學長來揪說來去彭園創始店吃"湘菜",上網一查才知道,原來彭園彭是"湘菜"大廚彭長貴創辦,傳承正宗湖南湘菜,以優質食材和精緻手工著稱啊,且著名的"左宗棠雞",以去骨雞腿肉搭配特調醬汁,也是是彭長貴先生在台首創創作料理。 當然,湘菜在大陸走跳時也常在各地都有吃到,最有趣的反而是在廣州花都,有間著名的湘菜館,居然是英國老闆所開的,而身邊小美女助理群們,也好幾個爸媽都是從湖南到廣州的,但...畢竟沒有機會到湖南,所以一直也還未吃到正宗的湘菜。 湘菜也就是湖南菜,是我國八大菜系之一。湘江流域菜製作精細,用料廣泛,口味多變,品種繁多。其特色是。油重色濃,講求實惠,在品味上註重酸辣、香鮮、軟嫩。在製法上以煨、燉、臘、蒸、炒諸法見稱,簡單來說主體是辣鹹油,口味算重的。 到了彭園,發現大家真的都想一樣,那這樣就請漂亮姚姐與主廚阿凱來帶我們吃吃這邊的一些特色小炒囉。 第一道就是經典的"小炒牛肉",上桌看那紅紅的辣椒,真的超級開胃的,害我拍照就開始不太專心了。 第一口當然是要辣椒與牛肉一併入口啊,牛肉滑順軟嫩,而辣椒是帶有微微的鮮鹹的辣感,對我來說屬於不辣等級,整體調味是非常好吃的,且辣椒後來我根本就是直接拿來吃配酒,完全是妥妥的下酒菜,剛好這時阿凱主廚也出來了,請教他為啥牛肉這麼的嫩,是不是有先處理過,當下告知我們是靠的就是一鍋到底的火候與速度,要是可以在辣一點一定更好吃。 "富貴烤雙方"又稱"富貴雙方",這真的是我在大陸沒吃過的,今天才知道也是創始人彭長貴先生所創作的湘菜,其最早出現於國宴中, 而裏頭的素方一段時間店裡就要油炸一堆起來,使用的油很乾淨所以沒有放一段時間也沒有油耗味,這道應該大人小孩都愛吃。 剁椒魚頭,每間餐廳都有自己的味道,而這裡用的是主廚自己發酵的泡椒,味道走的是酸辣鹹先的口味,魚肉軟嫩無腥味,發酵的辣椒出來的味道酸香好吃,魚肉配上這酸香微辣的湯頭那真是好吃,而主廚搭配了麵線在旁邊,泡在湯汁裡頭也是好吃,其實這湯汁淋在白飯也是很讚的。 彭家豆腐,原本是當初主廚幫彭長貴先生做的家常菜,但客人見到後也都想要來一份,所以後來也就列入菜單了,豆腐嫩滑醬香風味獨特,也是很下酒的一道菜。 韭黃炒羊肚絲,經過熱油爆香與秘製高湯翻炒的細切羊肚絲與韭黃,這也是經典湘菜,韭黃鮮脆羊肚絲無腥味且香脆嫩口,整盤菜香氣濃郁撲鼻色香味俱全,是道刀工及火候都重要的功夫菜。 雲南泡菜炒雞肉,也是主廚自己釀製的泡菜,因為老婆是雲南人,加上之前也待過人和園,所以對滇緬料理也是很熟悉,這泡菜走的是微微發酵的香氣,吃起來口感是清爽脆口,也是好下酒啊。 魚片糜粥,主廚看我們有喝酒,就說要做私房的粥糜魚片給我們試試,這粥其實是雲南的家鄉菜,在雲南煮粥後會把粥飯先撈出來,然後用剩下的粥湯來煮魚片並加入點碗豆,喝第一口感覺有點像廣東的粥水火鍋,雖說只有一小碗,但真的很讓人驚喜,調味清淡但吃的到魚肉微微的鮮甜,主廚使用的是黑魚,吃起來帶有些脆感,溫和的粥糜喝起來真的很舒服,且喝到後來居然有點人和園豌豆雞絲的鮮美。 拔絲地瓜,拔絲地瓜非常厲害,地瓜外層是脆殼的糖漿完全不黏膩,地瓜軟嫩甜口真好吃,很純正的古早味。 花生竹炭黑豆花,居然搭配著香菜一起上,這創意都非常的有趣,黑豆與竹炭粉的組合在拍攝的視覺上很有畫面,後加點香菜來提味,但最有趣的是清淡的花生糖水中吃得到一點點的脆甜,因為加入了香菜,所以口味真的很像在吃夜市賣的花生捲冰淇淋,果然,主廚介紹就說那脆甜感來自於打碎的花生糖,糖水不過甜但偶爾來的口感,剛好在甜與不甜間不斷改變,這真的要來吃吃就知道這位到了。 感謝阿凱主廚今晚的解說與姚姐的招待,下次一定要來試一場整桌的手路私房菜,因為今天彭園真的改了我之前的印象啊。 官網 https://www.pengyuan.com.tw/mobile/dishes_detail/5 https://zh.wikipedia.org/zh-hant/%E6%B9%98%E8%8F%9C http://www.hunan.gov.cn/jxxx/hxwh/cwd/201711/t20171111_4685369.html https://zh.wikipedia.org/wiki/%E5%AF%8C%E8%B2%B4%E7%83%A4%E9%9B%99%E6%96%B9 彭園創始店 台灣台北市中山區林森北路380號2F #Dinner #ChineseCuisine #TW

Definitely worth a visit. If you are a tourist and you are going to Peng's, very likely you are there for General Tso's Chicken. It is quite different from the American version but definitely good. The fried rice was also tasty and the service was fast and efficient. The ONE bad point is that arguably you can eat cheaper (and better) elsewhere in Taiwan. Still worth the money if you are in Taiwan.

Went on New Year’s Eve dinner - the restaurant is busy but not overly so - there are empty tables and no queue/waiting customers. But it looks understaffed that only a handful of staffs (4?) was supporting the entire floor. Dishes are coming out in random order and with no pacing nor flow. Food was fine but not especially memorable.

印象中的彭園都是應酬場,所以桌菜一上以前一直以為它是間台菜,當學長來揪說來去彭園創始店吃"湘菜",上網一查才知道,原來彭園彭是"湘菜"大廚彭長貴創辦,傳承正宗湖南湘菜,以優質食材和精緻手工著稱啊,且著名的"左宗棠雞",以去骨雞腿肉搭配特調醬汁,也是是彭長貴先生在台首創創作料理。 當然,湘菜在大陸走跳時也常在各地都有吃到,最有趣的反而是在廣州花都,有間著名的湘菜館,居然是英國老闆所開的,而身邊小美女助理群們,也好幾個爸媽都是從湖南到廣州的,但...畢竟沒有機會到湖南,所以一直也還未吃到正宗的湘菜。 湘菜也就是湖南菜,是我國八大菜系之一。湘江流域菜製作精細,用料廣泛,口味多變,品種繁多。其特色是。油重色濃,講求實惠,在品味上註重酸辣、香鮮、軟嫩。在製法上以煨、燉、臘、蒸、炒諸法見稱,簡單來說主體是辣鹹油,口味算重的。 到了彭園,發現大家真的都想一樣,那這樣就請漂亮姚姐與主廚阿凱來帶我們吃吃這邊的一些特色小炒囉。 第一道就是經典的"小炒牛肉",上桌看那紅紅的辣椒,真的超級開胃的,害我拍照就開始不太專心了。 第一口當然是要辣椒與牛肉一併入口啊,牛肉滑順軟嫩,而辣椒是帶有微微的鮮鹹的辣感,對我來說屬於不辣等級,整體調味是非常好吃的,且辣椒後來我根本就是直接拿來吃配酒,完全是妥妥的下酒菜,剛好這時阿凱主廚也出來了,請教他為啥牛肉這麼的嫩,是不是有先處理過,當下告知我們是靠的就是一鍋到底的火候與速度,要是可以在辣一點一定更好吃。 "富貴烤雙方"又稱"富貴雙方",這真的是我在大陸沒吃過的,今天才知道也是創始人彭長貴先生所創作的湘菜,其最早出現於國宴中, 而裏頭的素方一段時間店裡就要油炸一堆起來,使用的油很乾淨所以沒有放一段時間也沒有油耗味,這道應該大人小孩都愛吃。 剁椒魚頭,每間餐廳都有自己的味道,而這裡用的是主廚自己發酵的泡椒,味道走的是酸辣鹹先的口味,魚肉軟嫩無腥味,發酵的辣椒出來的味道酸香好吃,魚肉配上這酸香微辣的湯頭那真是好吃,而主廚搭配了麵線在旁邊,泡在湯汁裡頭也是好吃,其實這湯汁淋在白飯也是很讚的。 彭家豆腐,原本是當初主廚幫彭長貴先生做的家常菜,但客人見到後也都想要來一份,所以後來也就列入菜單了,豆腐嫩滑醬香風味獨特,也是很下酒的一道菜。 韭黃炒羊肚絲,經過熱油爆香與秘製高湯翻炒的細切羊肚絲與韭黃,這也是經典湘菜,韭黃鮮脆羊肚絲無腥味且香脆嫩口,整盤菜香氣濃郁撲鼻色香味俱全,是道刀工及火候都重要的功夫菜。 雲南泡菜炒雞肉,也是主廚自己釀製的泡菜,因為老婆是雲南人,加上之前也待過人和園,所以對滇緬料理也是很熟悉,這泡菜走的是微微發酵的香氣,吃起來口感是清爽脆口,也是好下酒啊。 魚片糜粥,主廚看我們有喝酒,就說要做私房的粥糜魚片給我們試試,這粥其實是雲南的家鄉菜,在雲南煮粥後會把粥飯先撈出來,然後用剩下的粥湯來煮魚片並加入點碗豆,喝第一口感覺有點像廣東的粥水火鍋,雖說只有一小碗,但真的很讓人驚喜,調味清淡但吃的到魚肉微微的鮮甜,主廚使用的是黑魚,吃起來帶有些脆感,溫和的粥糜喝起來真的很舒服,且喝到後來居然有點人和園豌豆雞絲的鮮美。 拔絲地瓜,拔絲地瓜非常厲害,地瓜外層是脆殼的糖漿完全不黏膩,地瓜軟嫩甜口真好吃,很純正的古早味。 花生竹炭黑豆花,居然搭配著香菜一起上,這創意都非常的有趣,黑豆與竹炭粉的組合在拍攝的視覺上很有畫面,後加點香菜來提味,但最有趣的是清淡的花生糖水中吃得到一點點的脆甜,因為加入了香菜,所以口味真的很像在吃夜市賣的花生捲冰淇淋,果然,主廚介紹就說那脆甜感來自於打碎的花生糖,糖水不過甜但偶爾來的口感,剛好在甜與不甜間不斷改變,這真的要來吃吃就知道這位到了。 感謝阿凱主廚今晚的解說與姚姐的招待,下次一定要來試一場整桌的手路私房菜,因為今天彭園真的改了我之前的印象啊。 官網 https://www.pengyuan.com.tw/mobile/dishes_detail/5 https://zh.wikipedia.org/zh-hant/%E6%B9%98%E8%8F%9C http://www.hunan.gov.cn/jxxx/hxwh/cwd/201711/t20171111_4685369.html https://zh.wikipedia.org/wiki/%E5%AF%8C%E8%B2%B4%E7%83%A4%E9%9B%99%E6%96%B9 彭園創始店 台灣台北市中山區林森北路380號2F #Dinner #ChineseCuisine #TW

Definitely worth a visit. If you are a tourist and you are going to Peng's, very likely you are there for General Tso's Chicken. It is quite different from the American version but definitely good. The fried rice was also tasty and the service was fast and efficient. The ONE bad point is that arguably you can eat cheaper (and better) elsewhere in Taiwan. Still worth the money if you are in Taiwan.

Went on New Year’s Eve dinner - the restaurant is busy but not overly so - there are empty tables and no queue/waiting customers. But it looks understaffed that only a handful of staffs (4?) was supporting the entire floor. Dishes are coming out in random order and with no pacing nor flow. Food was fine but not especially memorable.

Definitely worth a visit.

If you are a tourist and you are going to Peng's, very likely you are there for General Tso's Chicken.

It is quite different from the American version but definitely good. The fried rice was also tasty and the service was fast and efficient.
