I had stir fried beef pho with Hong Kong style milk tea. I would say overall it's NOT good.
Food: 5/10 Pho looks incredible, but the taste is blend and NOT AUTHENTIC, no wonder why they offered you the sauce, which I didn't use, even in Hong Kong. The pho are too thin comparing to traditional pho, the colour is not evenly distributed among them which indicates the chef didn't stir them well. Very disappointed considering it's their signature.
Drink: 8/10 Milk tea is good. Authentic.
Hygiene: 3/10 The tables are dirty and full of the leftover of the previous customers.
Service: 9/10 Better than Hong Kong ngl.
It's overrated and I can't see why it has such great reputation in the HK community. I can't believe they have such low standards. It's kinda funny that most of the reviews are written in Chinese, maybe they know this restaurant is not for foreigners because they don't want Brummies getting robbed.

Some years ago, I have heard this restaurant famous in where is near to my old home in Hong Kong and now it was closed in Hong Kong and moves to Birmingham. So the feeling is like meeting an old neighbour. Just a flavour touching my heart.
As I see the dishes of other orders, they are also pretty good. It is worth coming back to re-order again and try other dishes. I will order the meal set for two people, two dishes, two bowls of rice and two drinks. But be prepared and not surprised for this tiny shop for the suddenly long queue.There are around 20 tables at the food court, clean and tidy, shared with other 5 shops. So, it is not guaranteed to have seats during peak time.
