Top tier restaurant.

Great Japanese food (even by "Japan" standards, not just British!), sensible pricing and a very respectable drinks menu.

Music, as you'd guess, is of the new wave genre (fairly chill dance music, not too "pop"-y)

Walk in of 2, sat at the bar. We've tried a few ramen places around town over the years. Whilst they are often "passable", they're never somewhere I'd be excited to go.

This place was fantastic. My partner and I are both foodies (and she lives in Japan for a while!), and we've been to a lot of the "better" restaurants around Manchester. In terms of the quality of the food itself, this place is punching well above what you'd expect. We enjoyed it more than sparrows, it's a similar level to Hawksmoor and just as enjoyable as el gato negro.

When considering that good Japanese food can be difficult to find, and somewhat expensive when you do, this place really is a hidden gem.

Music was right up my street and a bit of a blast from the past, as it had the same vibes as some of my early WHP experiences. The store street nostalgia was a welcome addition!

At the moment, there's an awful lot of bad food charging £20+ a head. However, places like this restore my faith in there being good places to eat.

We also got a few drinks, which was balanced well around adventurous and "what you'd expect".

Absolutely will be...

Delicious food but service was off. Second time going and both times sat at the kitchen counter. First time sat directly in front of the chefs and had a great experience, chatting about the food and cooking. Second time sat more towards the bar area and it was not a good experience. The bartender didn’t seem interested in engaging in conversation the way the chefs were, which especially stood out because the people sat down from us nearer the chefs were constantly being engaged with and chatted to. Additionally, once we’d finished our ramen the bill was brought to us without being asked for and with half of our drinks left, no offer of seeing a dessert menu which we were wanting but completely put off of and felt pushed out. Other front of house were no issue, just seems the bartender isn’t interested in giving quality service. It would’ve been understandable if there’d been a turn on the table and, as a walk-in, we’d been informed when sitting that there was a tight turn, but it didn’t seem that busy and there were many tables empty and from where we were sat could see the POS that showed no other tables booked for where we were so it just felt like we were being pushed out for no reason. As I say the food was great and I’d still come back, just only if I wasn’t sat on the bar side of...

Just perfect. Manchester showing its finest yet again. Brilliant, warm, knowledgeable, friendly, fun, laid back and super professional service from the moment you walk in. Felt at home as a solo diner at an odd early afternoon hour, the moment I arrived. And it got better. Super tight menu and hence everything cooked with real flavour, originality and specialism. Lovely space, super-strong short wine list by the glass and basically nothing dull, routine but equally nothing not totally accessible and desirable on the menu. Terrific miso mushrooms and celeriac ramen full of deep flavour but light enough to require discipline not to wolf in seconds. Very generous, well cooked and creative sides and small starter/snack dishes alongside. Fun to sit at bar - as per the best bar tables such as Brat - really welcomed in by the service team, whilst also relaxed and well timed and not once hurried or without water. Checks, chats. All done. Exemplary service, outstanding value. As Jay Rayner said recently Manchester is having a strong food moment. But it’s not just the excellence of small plates and modern European such as The Alan (also magnificent friendly, relaxed, proactive, informed service), Elnecot, Ernst and more. Now Wave adds Ramen and more to the mix. Can’t wait to...

I’m Japanese, and this was my first time eating “Ramen” in the UK at this restaurant. To be honest, calling this dish ramen and serving it is nothing short of a fraud. I ordered the most basic shoyu (soy sauce) ramen. The flavour was overall so weak that the broth was nothing more than coloured hot water. There was barely any soy aroma, and no depth of chicken flavour at all. In Japan, broths are built from chicken plus seafood or mushrooms, but I detected none of those efforts here. The char siu (roast pork) appeared to have been steamed and then torched on the surface, but it wasn’t smoked, all the moisture had been cooked out, and it had zero flavour. The noodles were soft and waterlogged. I watched them drain the noodles, and it was clear they had no idea how to do it properly. Service was neither good nor bad—just typical. The menu did include other “Japanese-style” dishes and even sake. My guess is this place caters to people who “don’t know Japan but want to feel like they’re there.” As for the ramen itself, I can say with confidence it is nothing traditional. I hope they learn not just how to make ramen properly, but also the humble, studious spirit that Japanese chefs bring to their craft.

--- update ramen still as good as before. Portion sizes were very generous. Lunch menu is now a set menu with very generous portion sizes for starters. The chicken karaage was a bit dry so i probably wouldn't recommend. ------ old Small ramen shop on tib Lane. Went on a saturday at 1 pm and it was quite busy as there weren't many seats - try to make a reservation if possible. Ordered the paitan ramen, and it was amazing! I've had my fair share of ramen from my holidays in Japan, and the ramen here is definitely on par with the ones from Japan. The soup was creamy and addictive! It's creamy in taste but not too heavy. The noodles were cooked perfectly, and the pork was fatty and soft. I would definitely come back for the ramen again! I also tried the matcha pana cotta dessert, and let's just say I wouldn't order it again. Maybe it's more of an aquired taste, but the matcha pana cotta was very... soft jelly like and had a lot of lumps in it. The cheesecake cream thing on top was nice, but I didn't go that well with the match. The blueberry compote had a fizzy vimto like feeling to it. Final verdict: definitely try the ramen! avoid the desserts.

I had been visiting this ramen bar about twice yearly since it's opening. When it comes to ramen in Manchester, it is always and only New Wave for me. However, the quality of food and service has slowly deteriorated. This time, the broth was still immaculate, but the handmade thick noodles were likely not cooked properly and/or tasted unfresh. The noodles stuck together and were too chewy (not in al dente way but resembling low-quality instant noodles). If that wasn't enough, there was also a small fly in my soup, indicating that the kitchen staff wasn't attentive enough to the food and presentation. (Sorry that I didn't take a picture evidence of it. It was shocking and unsettling for me because I drank the soup, and I only tried my best to take the winged insect out from the broth using the black tissue provided without causing a scene.). All these for £16, a £3 increase in main course price since last year. This experience made me reconsider my loyalty to the brand. I will start giving other restaurants a try. Thank you for the lovely ramen experience over the last two years, you'll forever have a special place in my heart.
