Food was nice but it is incredibly expensive.
Service was fine can't complain.
The set up is where you pick your items and then whatever it weighs is what you pay. The weight you pay is also including the noodles you choose.
You have a section where you pick a bowl and tongs (assuming clean) and then use those tongs to pick out meats,fish or veg/vegan meat alternatives and then you pick all the veg options and noodles in the next fridge. Unfortunately, that means cross contamination from selecting meat products first to the veg and noodles second.
Saw a lady (customer) pick a bowl and pair of tongs, pick all she wanted and then proceeded to put everything back and put her bowl and tongs back in with clean bowls and tongs.
If you are concerned about cross contamination then I would not recommend this place. As nice as it was I couldn't help but think if the items I chose were clean and contamination free.

Although popular in china is not obvious what that means to many westerners: basically it makes a kind of spicy hotpot soup featuring sichuan peppers. The customer chooses the ingredients from a wide variety of options, and pays for them by weight. Then the kitchen quickly cooks them into a soup featuring a choice of 3 different types of broth.
The result is delicious and endlessly customisable, including many options for vegans and vegetarians as well as livers of meat or fish. I’ve never seen this before but it is a great idea and works very well well in practice.
