Albuquerque is not exactly a mecca for Chinese food. Chopstix is certainly one of the best Chinese food options in Albuquerque. Many of their best dishes are the ones listed on their wall menu (which changes to some extent seasonally), however, there are some good choices on their main menu as well. Customers who judge this restaurant based on the usual Americanized Chinese dishes offered are missing out, and missing the point. I've had much better versions of Americanized Chinese food than the versions Chopstix offers (although not particularly in Albuquerque). But the more authentic dishes can hold their own against what I've had elsewhere. And how many restaurants in Albuquerque offer several different leafy green vegetable dishes at any given time? Hollow heart vegetable--yum! While Szechuan food isn't the restaurant's specialty, I like most of the Szechuan entrees they offer. Over the years, I have particularly enjoyed: boiled beef, Szechuan fish fillet with soft tofu, hollow heart vegetable, cauliflower (from the wall), Japanese "egg" tofu, baby bok choy, sweet potato leaves, stir fried Chinese lettuce, pickled kohlrabi with pork, flower bead soup, dan dan noodle, ants climbing a tree (but they don't call it that), Jackie Chan special, homestyle tofu (not to be confused with the house tofu), chicken with ginger, stir-fried rice noodle with beef, mushroom beef w/ jalapeno, steamed pork with pickled greens and more that I don't have written on my annotated takeout menu, and have forgotten. On the down side, I sometimes find the quality of the pork and chicken they use a little lacking. Sometimes the chicken in the chicken dishes isn't trimmed as much as I prefer, but that's probably authentic (for better or worse). The beef generally seems to me to be higher quality. I'm not a big noodle guy but the Dan Dan noodles were really good. The soup broth was very flavorful. If you like noodles with a tiny bit of spice, this is the bowl for you! If I order this again, I will add a protein.
I thought the prok belly was really good. I only like a little but of fat so I found myself cutting off some from the pork. But let me tell you, the pork is very tender!!!
Fried rice was good, had that grilled/smokiness flavor. Went great with the pork belly.
I wanted to order the pot stickers but I had so much food that I passed on them. Gives me a reason to go back.

Meat came out still frozen in the center, then microwaved (drying it out) and re-served on same plate instead of being tossed and remade. The server was observed grabbing bread with bare hands to put on plate to serve. The female server seemed very rushed although she only had 3 tables total. She would often drop plates off at the table without even talking to us. The food was requested to come out together, but came out across a ten minute range of distribution. Worse yet, the server seemed to ignore my girlfriend each time she came to the table, on times when she talked. No eye contact.
