A Refined Palate’s Take on Trailer Trash Tacos
In the ever-evolving world of street cuisine, it is a rare delight to encounter fare that so effortlessly marries unpretentious charm with genuine culinary satisfaction. Trailer Trash Tacos, with their audacious name and laid-back ethos, manage to achieve just that — a flavorful rebellion against pretense that invites both curiosity and acclaim.
The tacos themselves are unapologetically bold. Each bite delivers a confident layering of textures and flavors: tender meats with a whisper of char, vibrant salsas with just the right amount of heat, and tortillas that, while humble, are the unspoken backbone of each creation. There is a playful irreverence to the combinations — think slow-cooked brisket kissed with citrus, or crisped pork crowned with a sweet-hot slaw — but the execution is anything but careless.
What elevates the experience further is the thoughtful pairing with cold, locally sourced beer. The effervescence and bitterness of a pale ale or the mellow richness of a lager serve as perfect counterpoints to the tacos’ richness and spice. It is a pairing that doesn’t demand a sommelier’s approval, yet earns one all the same.
And then, there is the setting — a vibe that leans effortlessly cool. String lights overhead, picnic benches worn just enough to feel lived-in, and music that hums just beneath conversation. It is a space where strangers share tables and stories over tacos and beer, bound by the simple pleasure of good food and good company.
Trailer Trash Tacos may not aspire to fine dining — but in their own rebellious way, they’ve achieved something finer: food with soul, served without pretense, best enjoyed with a cold beer and the easy laughter of a...
Read moreStacia the bartender added another customers taco on to my tab. I come in order my food and drink, the guy is trying talk to me. I’m not interested but I’m also not rude. He tells us this his first time here. I suggest to him to get the brushfire taco. He agrees so when Stacy’s comes back I say he wants the brushfire and even help him order. I asked do you want flour or corn. He gets his taco and starts talking to another lady at the bar and then shortly after tells me he about to leave and ask me for my number outside, I politely declined. He leaves. I asked for my tab later. Stacia brings back a check with his taco added. I tell her I only had one taco. She said well you were talking to him so I put it on your tab. Remind you the taco is $5.00 not that much. I keep telling her I don’t know him, she start rolling her eyes, jerking her neck, getting loud, saying yes you do. It made no sense. I said so because he was talking to me you put it on my tab? I said may I speak to a manager. She said I will think about it. Then she come back what you want to talk to him for? DUH YOU! So unprofessional, how do you add other people on someone else tab and then argue about it? No next time ask him, do you have a card that you would like to start a tab with? That is what she did to me. See when you only target asking a certain group of people (black women) for things it can backfire. Put a random stranger taco on my tab and I had to explain that I don’t know him. What kind of customer service is that? No apology offered she just kept a snobby attitude. Trying to put something on my tab cause she didn’t do her job. It was only $5.00 but the fact you gone tell me I know this...
Read moreI come in torchies everyday, the employee have recommended me to get a water cup which I get tea, no employee as ever as me not to, I fully understand drinks are 3$. I was approached very rudely, and had the management Dianna who is very rude and unprofessional, tell me in taking money from her pocket, accusing me of begging for extra items and not paying, basically assuming, everytime I dine im costing her money directly. The is absolutely the worst experience ive had with torchies. I know Keith at the Collins location permanently and never received this treatment. I told the women she could told me not to do it and ask me to buy a drink, but her rude approach and energy was uncalled for which she tried to apologize but it was to late and my experience of peace was ruined so, I won't come back to this location, any time she is working and I wouldn't advise anyone to do either until changes happened. TOO TOP IT ALL OFF. My food was made incorrectly 2 times first it wasnt well done, secondly, it came with a corn instead a flour but im getting preach about her losing money. I poured my teas out and got lemon water as well. I don't steal and my family is well worth of a million dollars google multitechinc group. So im highly offended. ALSO as a black man I feel targeted as "thug" ive worked over 10 years consecutively with 1 company im not a thug and dont appreciate...
