First let me start by saying the lady who greeted my oldest daughter and I was VERY nice for 3 o’clock in the afternoon which is really nice! We walked in yesterday in search of the perfect crusty bread for my upcoming potato soup, and grabbed the last sour dough loaf off the shelf. It was quickly sliced by magic, and while I was waiting I made eye contact with 4 croissants in the display. I decided to purchase them, and after being instructed how to properly reheat them the following day, we retreated home.
530 am rolls around, my 7 month old son demands a bottle, and I drag myself out of bed to the kitchen where I quickly make eye contact with the croissants again. BAM! Eyes open. I make the bottle, preheat the air fryer and run back to my room. My cats are thinking it’s time to play and run after me in excitement, meowing in agreement at the sudden cardio workout. I quickly place the bottle in my sons face and wait for the beep to signal preheat is done. Fast forward, and I place the croissant in the basket, set to 365 for 6 min. And stand there, the whole time. The smell is AMAZING. There are little sesame seeds on top and they are gently toasting. Finally! It’s done. I grab a knife, cut through it, and the crunch I’m sure, can be heard all the way to London. I bite.
Oh.... my....goodness. The flavor is INCREDIBLE. You are met with the most amazing taste of butter that is richly laminated throughout the dough. Inside is quality ham, salty and tender. Cheese that is creamy and sweet. The aroma mixed with the taste is amazing. I have crumbs all over me, the baby, the bed, the cats. But I don’t care, we are all just lucky to have it sprinkled like pixy dust on us. I chomp chomp chomp, the sound is equally amazing! The flake of this thing is impressive! Have I ever had a croissant before?! I can’t recall!

From the moment you walk in the door, until you leave, you will be amazed by the baked goods in the display cases, and the hospitality of Stephanie, the owner (I've never met her husband, Alex, because he has already put in a days work, and has gone home by the time I get there. He comes in very early to get the day's baking done by the time the doors open).
I live in the Sacramento area, and sure do wish I could find a good Danish bakery. To date, I have been unable to find any Danish bakeries. That's why, when I come to Denver twice a year, I have to stop at Knead the Bakery and get my fix. I come with family in tow, usually arriving in more than one vehicle. We always enjoy the Croissants, then follow them up with an assortment of Danish pastries. We share so we can each get a taste of many different treats. When we're ready to leave, we find a sweet treat, like a kringle, a turnover, or a strudel to take home for breakfast the next morning and often a loaf of bread.

Read moreWhen you walk in the vibe is welcoming and relaxing. They took a square developer built box and created a space that allows you to enjoy the amazing baked goods they produce. Not sure about you all out there but being able to bring the kids somewhere that is clean, chill, working middle class decor (worn, rugged, not easily broken, practical, intelligently crafted) open, with a couple cool nooks with books is a rare and priceless thing. The ham and cheese croissants, danishes, Irish soda bread, cookies etc. are all spot on. Nothing fancy, processed, or over sugared to mask potential culinary shortcomings about any of it which is right up our alley. The staff is friendly, professional and all around an excellent addition to the already valued food. The prices are competitive so it's easy to walk out of their with much more than what you intended to sample and purchase. Get there early because they do run out of things, especially on the weekends. The location is off of Wads, the artery of the foothills suburbia. Lots of parking and easy to access.
