I got to Papas and Beer a little after lunch time and were quite pleased to find absolutely no wait. We still had a long drive ahead of us to get back to Charlotte and the thought of waiting for food.. sitting and eating.. then getting on the road for three hours wasn't sounding all that much fun. Luckily for us we walked in and were seated immediately.

After the server brought out some chips and been dip we asked if there were any salsa choices for the chips and they kindly pointed us in the direction of the vast salsa bar. There were maybe 10 different flavors ranging from mild to hot.. but nothing over the top.
I got the Chilaquiles because of all of the Mexican food I've eaten over the years.. I HAVE NEVER SEEN THIS ON A MENU. Which is a shame because the dish was amazing. All I ever see on menu's are the same old boring Mexican restaurant standards... enchiladas, tacos, burritos, nachos, burgers and french fries, I honestly don't believe Mexicans eat one of those things every day of the year. So it was a blessed surprise to see something new on a menu and I ate it up :)
For those don't know what a chilaquiles is... at Papas and Beer its a big pile of grilled chicken, corn tortilla strips, a fried egg, some salsa, cheese, and a sauce I forgot the name of.. but it might have been molcajete sauce. As with most dishes this dish can vary depending on the region it reflects.

Read morePapa's and Beer canceled my order to feed 180 people for my daughters wedding Monday at 5pm 5 days prior to her Saturday wedding.The menu was set and all salsa was taste tested. It had been confirmed at least 3 times and deposit had been paid. Their reason was not enough resources or staff to cook the food. Not true. They gave no help to me, just come get your refund. After I spoke to the owner and told him I went to his competition for the food. He did apologize and offer whatever I wanted above what they were doing he would give me free. A kind gesture of course but when I asked for the salsa and chips and 6 cheese dip that would have come in my original order he only gave me the salsa and only 2 cheese dip. The person that picked up the food for me had to ask for chips and they only brought 2 grocery bags of chips. Originally it was a box with 8 32 oz salsas and 6 32 oz cheese dip in order. Bottom line they simply didn't want to fulfill the order because the quote was lower than what they were willing to cook it for. If there had been real communication from the owner or management I would have gladly paid more to have my daughters wishes for her wedding completed. Lesson to them and to me.
