Nestled in the heart of Aspen, Prospect at Hotel Jerome is an extraordinary dining experience that seamlessly combines elegance with a warm, inviting atmosphere. From the moment you step inside, the sophisticated decor and attentive service set the stage for a memorable meal.
The menu at Prospect is a delightful celebration of local flavors and seasonal ingredients, crafted with precision by the talented culinary team. Each dish is a work of art, beautifully plated and bursting with flavor. The selection ranges from inventive appetizers to mouthwatering entrees, ensuring there is something to please every palate. I highly recommend starting with the seasonal vegetable tart, which balances freshness with a rich, savory filling that sets the tone for the meal.
For the main course, the pan-seared trout was a standout. Cooked to perfection, it was flaky and tender, served with a delightful side of roasted root vegetables that complemented the fish beautifully. The attention to detail in flavor combinations and presentation is evident throughout the menu, showcasing the chefs' commitment to excellence.
The wine list is extensive, featuring a curated selection of both local and international options. The knowledgeable staff is more than happy to recommend the perfect pairing to elevate your dining experience further.
Dessert is not to be missed either! The chocolate molten cake was a decadent finale, rich and indulgent, paired with a scoop of house-made vanilla ice cream that added a refreshing touch.
Service at Prospect is impeccable. The staff is attentive without being intrusive, ensuring that every guest feels special. Their passion for hospitality shines through, making you feel right at home.

Read moreUpdate: I see that others have commented on the rude hostess. I hope she’s been let go at this point as I would not ever go back to Prospect due to her. Prospect management tolerating this type of behavior and/or turning a blind eye shows they have zero integrity. It’s a shame; we love Aspen so much and will avoid this restaurant each time we come.
I hate to do this. Overall, we had a good experience at Hotel Jerome and would stay again, and love Aspen. This is specifically for the maitre’d/host we had during our reservation at Prospect, and not for the other staff nor the food—which was great. I called down 3 times to try to let the restaurant know that we had gotten in later than anticipated to Aspen and could be running a bit behind to make our reservation. Ultimately, we were 2-3 minutes late to a 7:30pm reservation. No one answered the phone so I personally walked down to let them know we had just checked in and were getting our bags settled and would be down shortly. Both the hotel check in desk and the person who brought our bags up, even let me know it would be “fine” and not an issue. We were very cognizant of our later than anticipated arrival and making sure to communicate this. We did not get into Aspen until a little after 7pm. The host however, told me her “staff had been on for 10 hours” and that she wanted them to “be able to go home soon.” I asked why we were allowed to make a 7:30pm reservation if the restaurant was concerned about staff hours. She asked me to “not feel guilty,” to which I expressed she had made me feel extremely guilty! She kept saying things in contradiction: “on one hand, for you, this will be fine,” and on the other “my staff has been here 10 hours.” Is this something you share with restaurant guests regularly? Maybe she was the one who wanted to go home! It was a disappointing welcome, and ruined an otherwise great meal and service from our server and...
Read moreAll may seemed nice at the beginning. Our horrible thanksgiving starts with this wobbly table and impolite waiter. We are all Asians as you may see. We feel we are neglected at all time as the waiter was only here for order and check. While checking, he is trying to grab our card instead of showing how much to pay first. He didn’t tell us that the service fee is included at all until we realized at the end. The way he talks is bossy and try to order us what to do. Didn’t come to the table to ask about the food ever !!! Ok. Next is about the food, the salmon is salty and it is even worse when you add the sauce that come with. I don’t know what kind of veggie that is used to pair with the salmon, but it is well over cooked and fibrous. The lamb loin sucks!!!!!!!!!!!! It can’t even compare with the lamb chop you get at Vons! It tastes as weird as it gets. Super smelly and sour. Not sure whether it’s the marinade or the meat is bad. The pastas we ordered taste interesting( in a bad way). The 90ish dollar steak cannot pair with its price but I have to admit it tastes normal at least! And sweet bone marrow? Octopus is tender but the flavor is…… well…. blend in flavor but salty in taste. The manager came at the end but nothing resolved. Asked for my contact but that’s it. It’s a really unpleasant experience! We 6 people spend over 600. You aren’t supposed to force us to pay for your...
