Traveling through on a road trip and WOW, one of the best meals we've had in some time. Baker City is soooo lucky to have a place like this! I told my husband more restaurants need this approach - food from around the world rather than just one focus. It was so fun to experience so many flavors in one evning. It's obvious these owners and chefs care about the quality of their food and the restaurant as a whole. It's gorgeous inside!!!! Staff was all wonderful, even those who weren't our dedicated servers. Felt so welcomed there :)
We lived in San Francisco a few years ago, so we are familiar with tapas style dining, and the intention to take your time enjoying the care and creativity put into the food. Like in Spain where mealtime is for social enjoyment, savoring each bite and not just trying to stuff ourselves 😆. Having said that, we were stuffed by the time we left. My daughter even said no to dessert because she was full . 😯
Here's what we had:
Miso egg: Divine! Creamy and luscious yolk, and the sweet/salty miso was so unique Miso goes with everything, egg goes with everything. Match made in heaven! One reviewer didnt like the micro greens paired with it, but I totally disagree. The bright contrast of the greens was the right balance for the rich egg. I ate every single green on the plate :)
Kimchi: It was nice and a generous portion. We appreciate something so unexpected on a menu. My husband prefers a more tangy kimchi, but for my young daughter and I, the more mild taste was right for us.
Smoked pulled pork tacos: My favorite bite of the evening. My daughter and I shared the 4 street size tacos. The toppings they add are exactly right to highlight the smokey pork. Each bite was rich, meaty and juicy while somehow being bright and summery at the same time. I would order them daily of I could!
Fondue: Really nice blend of cheeses and a big portion to dip into! Appreciated the addition of fresh veggies on the plate for those of us avoiding carbs.
Ceviche: Another favorite! The diced cucumber in it was sooo yummy! Perfect portion for 3 of us to share without feeling like I didnt get my fill. I love ceviche so i would've been sad if i didnt get my share! Ha! House made chips were a noce touch too.
Smoked Beef rib: Ohhhh myyyy goodness. It was huge and apparently takes NINE HOURS to prep and smoke, and you can taste that love in it! My husband is a meat-a-holic, a foodie, and amateur chef, and he didnt hardly look up from the plate while eating 🤣 He was especially excited about the chimichurri. Super flavorful. The potato salad along side was also delicious and definitely an upgrade from typical potato salad.

I don’t often write reviews, but The Cabyn Cocktail Bar & Kitchen absolutely deserves one. From the moment I walked in, the warm ambiance and beautifully curated interior hinted that this was going to be more than just a typical dining experience — and it absolutely delivered.
I ordered the beef rib and the watermelon salad, and both were truly outstanding. The beef rib was enormous and unbelievably tender, with a depth of flavor I’ve never experienced before — rich, smoky, and finished with a vibrant chimichurri that brought it all together. It’s hands-down the most flavorful beef rib I’ve ever had.
The watermelon salad was the perfect contrast — refreshing and bright with juicy chunks of watermelon, crisp cucumber, peppery arugula, and creamy goat cheese, accented by a subtle hint of mint. It was beautifully balanced and could honestly stand on its own as a main course on a hot day.
Even though I’m not usually a drinker, the cocktail menu was too tempting to resist. I tried one of their house creations, and it was not only expertly crafted but also a visual treat. Watching the bartender at work was like watching a live performance — precise, confident, and completely in the zone. She was incredible, and it’s clear that this team takes great pride in what they do.
It’s worth noting that The Cabyn is run by a husband-and-wife team, which adds a wonderful personal touch to the experience. There’s an energy in the room that only comes from people who genuinely care about what they’re building.
The prices were more than reasonable for the quality, and the vibe — cozy, eclectic, and relaxed — makes you want to linger just a little longer.

Read moreI am very disappointed in this establishment. I was very excited by the photos and positive reviews; however, reality fell very short of the expectation. The most disappointing part of the night was by far the food. The menu claims to serve family style, which they do, but the portion size are barely suitable for a single person and therefore do not work well with family style serving. The stuffed mushrooms were abysmally undercooked, and while they claimed to have chorizo in them, I personally found none. The only hint that there was any form of chorizo present was the overpowering spice, which overpowered all other flavors in the dish, leaving me with nothing but the texture of undercooked mushrooms and spice. The kimchi was similarly disappointing. It had not been left to ferment correctly, nor did it taste as though any form of seasoning spices beyond the singular pepper used to increase the heat of the kimchi. I do have to give them props for their misso egg, which was creamy and well cooked. That said, the micro greens served with it do nothing for the flavor and honestly don't do much for the presentation either. It did leave an odd flavor in my mouth that lingered unpleasantly for hours. The mixed drinks were equally disturbing in their lack of desirability. The margarita tasted of nothing but sour mix. By the horns tasted of little more than burnt sage and burned like straight liquor. The only drinks that were decent were the 2 Japanese wiskey shots I tried, which would have benefitted greatly from being offered mizuwari (served with a small amount of hot water) as opposed to on the rocks. While this might seem odd to locals, most of the stronger Japanese whiskeys are meant to be served in this fashion.
