Lilia’s Mexican Cuisine : A Must-Try in Bellingham: Today, I visited Lilia’s Mexican Cuisine on Bakerview Road in Bellingham, and the experience was outstanding. From the moment we walked in, we were welcomed with warm hospitality and seated in a spacious, comfortable area. The tables were well-spaced, providing a relaxed and private dining experience.
One of the highlights of the meal was the tableside guacamole service. A server brought over a prep table, fresh avocados, and a variety of garnishes, allowing us to customize our guacamole exactly how we wanted it. Watching it made fresh right in front of us was a great touch, and the flavor was incredible—perfectly balanced with fresh ingredients and just the right amount of spice. It paired perfectly with the warm tortilla chips, and for the first time, we finished an entire serving of guacamole. It was so good that we ordered a second basket of chips just to keep enjoying it.
Other tables in-front and behind us received the same great service, including the guacamole prep table!
Our server, Reymundo, also introduced us to Lilia’s house salsas, which are family recipes, "recipes our family grew up on" said the server. The red salsa had a deep, tasty flavor, while the green salsa had a tangy, vibrant kick. Both added depth to the dishes and showcased the restaurant’s dedication to authentic flavors.
For the main course, we ordered the Quesabirria taco plate, which included three birria tacos, served with rice, beans, and a side of consomé. The presentation was excellent, with generous portions and a variety of fresh garnishes. The birria was tender and flavorful, with the tortillas perfectly crisped. Dipping the tacos into the rich consomé enhanced the flavor even more. The beans and rice were also well-prepared, with the beans having a creamy consistency and the rice being light, fresh, and well-seasoned.
Even though we were full, we decided to try dessert. The flan was smooth and creamy with a caramel drizzle, while the sopapillas were soft and fluffy with a light cinnamon-sugar coating, drizzled with chocolate and caramel sauce and served with ice cream. Both were excellent and the perfect way to end the meal.
Lilia’s offers an authentic and well-executed menu at a great value. The food was fresh, the service was exceptional, and the atmosphere was welcoming. At just $19 per Quesabirria plate, the portions were generous, and the quality was clear in every dish.
This is easily one of the best Mexican restaurants in Bellingham. I’ll definitely be back to try more of their menu.

I loved the decor and the colors, so bright and happy vibes. The high ceiling, and wondered, how the heck they got a real antique truck way up above, the kitchen entrance. Just say you’re cooking white people food disguised as “Mexican” in Texas we call places like this Tex-Mex and even then, they are good but damn, this food was terrible to the point where our kids didn’t even eat, that’s how bad this place is. If the owners are MEXICAN they have completely forgotten their roots and don’t have a clue what good Mexican cuisine is really like. I am half white, raised with white family, and I know what authentic Mexican food is, this is NOT IT!!!
