I live on the far West Side but Veronika's croissants and other items are so good that I will drive all the way downtown just to sit and eat in my truck outside...lol! It's a Saturday morning treat for my kids and I. A lot of what I've had from her takes me back to when we lived in Germany in the 80's when my dad was in the USAF. Veronika is from Uzbekistan if I remember correctly and brings that Eastern European vibe along with a classic French pastry tradition into her tiny little shop and is so dang good that she usually sells out before noon, so get there early before all the good stuff is gone. We typically get chocolate croissants that are so light, flaky and buttery it will make you weep with their etherealness. She uses real French butter and aside from the amazing layers of flakiness is a taste unlike anything you will get anywhere else in town. I've also had her "snails" which are made with the same dough as the croissants but are a bit firmer and have raisins in them. They are shaped like snail shells, hence the name. Another favorite is the walnut Anastasias. They are kind of hard to describe but are delicate, buttery, nutty pillows of wonderfulness. She opened in early September 2017, and has garnered a special following among Billings residents. She bakes from scratch early in the morning each day, opens at 8 am (9am on Saturdays, closed Sundays), and stays open until she sells out. Veronika herself was very nice and welcoming, explaining all the different pastries to me. As for the pastries, we bought five different kinds- raspberry pinwheel, pumpkin, chocolate croissant, apple strudel, and the plain “fancy croissant” is what she called it I think.
