We had the rehydrator alcohol free cocktail, it felt like a real treat that made us not even miss the alcohol. A bright cranberry flavor with lime and enough honey to balance the acidity. The salsas were fun and unusual with a tomatillo one that was actually creamy. The smokey deep red salsa was a favorite. Service is friendly yet professional. Overall feels like a chef run restaurant. The chili relleno was nice and crisp with a thick battered shell. Maybe they also roast the peppers because the stem was charred even though the shell was perfectly brown. Great texture with a nice dark brown sauce. There's a really cool mural inside made by a graffiti artist from the RINO area where the other Bellota is. Atmosphere is classy but comfortable. We'll be back.

We decided to come here when my Fiance said that she wanted something she could never get when she goes back to Switzerland. This was definitely that. The service was wonderful, the ambiance was incredible, and the food was inventive and fun but had very varying salt content. My mom's food (chile rellanos) was way too salty and mine was lacking any sort of flavor(the king trumpet mushroom tacos and cheese tacos). Mixed the two and it was delicious actually. Our appetizers were delicious(corn and I'm guessing carbon/beans and rice with tortillas) and the cocktails were dangerously delicious if just a bit small! Overall it is a fun place to come but be sure to test your foods salinity and spice level.

Chef Manny is the man- we loved everything we had. Highly recommend the shrimp taco, margaritas and queso fundido. The sauce trio was also wonderful. We will be back and very happy to have you in the neighborhood. Welcome to Boulder! ❤️

WOW. I am obsessed with this place. From the amazing drinks (best Paloma I’ve ever had!) to the decadent food, Boulder desperately needed a top-notch Mexican restaurant and Bellota DELIVERED.

We started with the salsa trio which were all SO fresh and totally different from each other! Loved them all but the orange one?! Insane. Moved on to the ahi tuna tostada. WHOA. The tuna was so fresh and whatever the crunchy stuff is they top it with…I could eat a whole bowl lol. I’m kind of basic so I couldn’t pass up trying the Caesar salad. It was one of the BEST Caesar’s I’ve EVER had anywhere.

For our main, we got the taco flight. Every single taco was amazing but for me the stand outs were the Ribeye and the SHRIMP TACO. HOLY MOLY. I have never had such a creamy, cheesy, rich taco in my life. I will dream about that taco. It was worth all 2 million calories that were packed into it.

The service was quick, the drinks were fresh and strong and we were thrilled with our feast. Can’t wait to go back and try the other side...

I worked at a high-end Latin American restaurant in their kitchen, at their tables, and as their expeditor for a decade. There is very little here to complain about. Most items on the menu are very common and inexpensive. So I ordered cheaply. Chips & salsa, pork tacos, & Chile Rollenos(fried, cheese stuffed peppers), the most basic & cheapest order possible. Everything was made from scratch as the fresh smells surround you and even the chips came with 3 excellent & Very distinct salsas. The pork was excellent but they came with the best(by far!) flour tortillas I've ever had. I've had dozens of stuffed chilies before but never so detailed. Beautiful consistency, good flavor, Very fresh, and one cooks perfect "execution" of their Chef's unique recipe. I only wish I had known and ordered more. Even the bars Hibiscus Cooler was By Far the best I've ever had. Will...

I have never been more uncomfortable at a restaurant. Our server, young girl brown hair and blue eyes, sat a couple next to us that made us extremely uncomfortable. My girlfriend and I are young, they were older and trying to hit on us and get us out, with our servers help. My girlfriend got so uncomfortable and started crying that she had to leave. After asking the server to move our table she declined, it took her 20 minutes to get my to go boxes. She kept flirting with me and it was extremely inappropriate. I will never come back here again. Our server even placed that couple NEXT TO US after originally seating them at another table across the room. I feel really gross and weird from this experience. We came to eat food and have a good time and ended up getting harassed by our server and some weird key...
