First of all, let me mention the fact that this is literally the most expensive Mexican restaurant I have ever been to for dinner (in this town also), because lots of reviews erroneously state the prices are "good". The place used to serve a higher quality of recipes (I even told my dinner companion this before we walked in to save her the sticker shock, but I regretted even recommending this place later) and that has notably changed. Been here twice in the four years I've lived here. The first time they served me the wrong dish (chalupa instead of enchiladas that I ordered). The wait on the food was very very long. The wrong dinner was served to me and I couldn't get my waiter to come back until my husband had completely finished his meal. They offered to get it right and now I have to wait another half an hour to eat while my husband sits to watch? No thanks. Then the apology and an offer to send me home with the meal I ordered free of charge (I didn't touch the chalupa). Ok, why not? Nope I'm charged full price at the register even though we waited another 25 minutes. The food was impressively good when I got to eat it an hour later at home though? Gave them another chance today. I arrived to find the menu had changed. I ordered what was recommended as similar to my old favorite by waiter. Well it's another long wait. Our food arrived and mine was literally not even edible; totally gross. I wanted to send it back and get something basic but I failed to get our waiter’s attention to return my food and yet again, my dinner companion was completely finished with her meal before I got to send my food back ( and she was not impressed with her taco salad either saying she'd not order it again). So the waiter finally comes by to mention that the kitchen was preparing me another one? No thanks. Never again this is the second time I leave this place hungry. At least they didn't charge me for it? Sorry but I can't understand why this place has such good reviews. I did notice the food quality has gone down. It's a pricey place for Mexican food but it used to be worth it yet I can no longer even say that. Two stars for...

El Caporal Mexican Restaurant offers van-accessible parking on the west side of the building; however, the striping on the parking lot may be faded, which could make it difficult for drivers with mobility needs to identify the space and access aisle clearly. There is a slight lip at the entrance, which may be manageable for some wheelchair users but could pose difficulty for others depending on mobility devices and independent access needs. Inside, the men’s restroom includes an accessible stall, which is a positive feature for customers using wheelchairs. However, the accessible stall in the women’s restroom has a door that swings inward, making it impossible to close the door while inside with a wheelchair. This prevents privacy and full accessibility, which does not meet ADA standards. The tables inside the restaurant provide knee clearance, allowing wheelchair users the option to dine comfortably. El Caporal shows some effort toward accessibility, but improvements are needed—particularly in restroom access—to ensure that all customers can enjoy their dining experience with dignity and...

This is a professional, family run Mexican restaurant

We spent a few days In Canon City on a whim. Based on the reviews we chose to try this place for a dinner and we were glad that we did.

This a very professionally run Mexican restaurant. It is second to only The Pantry in Santa Fe, and maybe the Pappasito's chain in Houston. Everyone was quick, efficient, and hell bent on satisfying every customer. Even the pro busperson, when faced with an absolute mess left by a family with young children, attacked the area with vigor and had it clean in about four minutes. It was a sight to see.

Our seasoned male waiter was also a pro. He was handling at least six tables but he made us feel that we were the only one.

We ordered a chicken fajita dish to be split. It was a good move because there was no way that I could have eaten double what I did. The food came out quickly but was sizzling so you knew that it was cooked to order.

I had to dock one star because the condition of the rest room was abhorrent.

But we would come here again. Kudos...

Me and my mom was passing through Cañon City and I wanted Mexican food. After she saw the good reviews we decided to try it out. However, I believe those reviews were wrong. This restaurant was like a Taco Bell. The salsa was spicy, I liked it but they don’t even give you a cup of it, I guess you gotta keep asking for it. My mom wanted to order queso since the salsa was too spicy, but they don’t offer it which I never been to a Mexican restaurant that didn’t have it. I got the chicken quesadilla and my mom got a chicken taco salad (they don’t give a taco shell, but you get a few chips on top), the food did look good but the it didn’t have any flavor. I feel like I could’ve made food better at home. Also, my cup was dirty which made me not drink anything with my meal. The service was good and the food came out in less than 10 minutes but I won’t come back. I gave 2 stars because of the service and at least the food was edible, just not delicious.

Was staying in Canyon City for two nights on the way to Philmont from Denver. Being from the North East I have always been told that the Mexican food in the Southwest is so much better than we can get here. The people who told me this were right, food was Amazing! Service was also amazing, we had a group of 11 and called to make sure they could accommodate us so close to closing time because we had hit bad traffic. They did not have an issue accommodating us and service was just as amazing as the food. We had one person in the group with several food allergies and they went out of there way to accommodate him.

This was an awesome choice. All the food and service were great. The portions were much bigger than we needed, and we over ordered. All the sided were good, and the Chile Rellenos were exceptional. The Chimichamgas were good, but I probably won't order again. They had a lot of chicken that tasted like it was canned and a little flavor different than we are used to. Just a suggestion for management, put the guacamole on the side it is something some people really like, and to some, it's a turn-off. Overall, it was a great place and will return someday.
