Out of the gate I was pretty disappointed. Mostly all the rolls are just salmon. Sadly the salmon all looked like it was farm raised as it's the pale orange with heavy fat marbling. Typical sign of farm raised salmon. So that was an instant hard pass for us. Which means the shrimp is most likely farm raised too. So that brings the sushi roll menu down to about 15% left. While we picked through the roll menu we ordered a miso soup. That came out basically clear. Never had clear miso soup. Anyways we ended up ordering mainly tuna rolls as there is very few fish selection aside from salmon or something with salmon. Other fish listed on the rolls is just tuna, yellowtail, eel, supposedly crab (looked and tasted like imitation crab to me), shrimp, lobster, and of course more salmon. Sushi and sashimi menu is very small and basic. All the rolls come out as one lump sum. They don't bring them out as they are made. The rolls were presented well but did not have much color. All the tuna was pale pink as pictured. Not sure the type or cuts of the tuna since it's not noted. We were not fans and it didn't taste that great. Personally I thought some of the tuna looked a bit too slimy. We both now have the fish burps which never happens when we eat fish. The price for this place is too high for the quality. Their prices are comparable to several of the top sushi places in the metro area. Personally I won't be back mainly due to the quality of the fish, lack of variety, but the prices sure sealed the deal. They also have 'Super White Tuna' which isn't tuna at all, its Escolar which many people are sensitive to. It's banned in Japan, the sushi capital of the world for a reason. It's also cheap which says a lot about this place. I'd recommend googling Escolar if you got things to do after eating and have never had it. 1 star for the sushi, 4 stars on the service.

Had a great time at Ito Sushi yesterday. Service was wonderful with plenty of genuine smiles and assistance with plates change when we wanted another clean plate so the taste of rolls was not affected by the previous alacarte creamy dishes we had enjoyed. The place was clean and feels fresh. We requested to be seated near a power outlet to recharge our phones and were promptly ushered to the corner seats which gave us a lot of privacy and great view of the restaurant. We looked the contemporary fusion vibe of the place, with its American pop music, and mix of bold Japanese and Chinese decor. Particular love the fish lanterns. Food was surprisingly good especially the innovative sushi rolls. We ordered 5 rolls from the ordering sheet, and 2 ala carte items from the appetizers/sides menu. We particularly enjoyed the waygu beef, Denver Bomb and Wasabi Crunch! The fried calamari was disappointing though as it was too overly fried so they were terribly chewy tough. We were there from around 3pm and left around 5:30pm. As there was no dinner rush yet, the host and servers were very gracious, allowing our party of 4 to chit chat and catch up. Often checking on us if we need refills of water. I will recommend this restaurant to the Castle Rock residents for sure!

I would've preferred getting sushi from King Soopers over this location. Since I ordered online and had never been inside this restaurant, my normal check of the sushi bar did not take place prior to placing my order. All of the fish was wrapped in cellophane, which to me is an immediate tipoff that they're trying to preserve it longer then they should and that's affecting the overall freshness. The other two entrées were soso at best. Potstickers were pretty decent and the crab Rangoon was really good. My entire order was almost $90 including tax & tip. From a value perspective, I felt compelled to share this review.

I ordered food online to have it delivered to my home, which is a mile and a half from Ito. I was told they would not be able to deliver it because I lived too far away, when their website says they deliver for free up to a five mile radius. I decided to call and get a refund for my order because of said reason and also because I was waiting over an hour for my order, thinking they’d deliver it. I was told there are no refunds and someone would bring my food to my door shortly after. When the food arrived, it was cold and one of my food orders was wrong. I left a review about my poor experience on Itos website, only to be called up by who I assumed to be one of the owners? She called only to chastise me about giving a bad review, yelling at me and calling me a stupid liar in a broken English, thick Chinese accent. I calmly tried to explain why I gave the bad review and she flat out refused to listen! I had no choice but to hang up on her and block the restaurants number to prevent her from calling back and yelling at me again…… I just can’t listen or try to reason with someone like that…… no one should be treated like that just for a bad review, everyone has bad experiences sometimes and their own opinions. Never in my entire life have I gotten treatment like that from anyone over being honest and giving a bad review. I really wish I didn’t have to give a one star rating just to do a review. This restaurant is clearly not worth it….. not worth anyone’s time or money either. I will also add that the prices are a bit much and the quality is lackluster the amount of...

We went to Ito sushi for the first time last night for our 28th anniversary. First of all WOW! We were there when it was a different restaurant and they have done such an amazing job decorating this place. They've made it so nice and cozy and just a really awesome atmosphere. A couple of different bars to sit at, very comfortable booths and tables. I was so impressed from the moment we walked in. Our server, Stephanie was amazing. She gave us great recommendations and she was just just great! All of the servers seemed so friendly and helpful. We had such a good experience. We ordered the spicy garlic edamame, which was amazing and then we decided to order the sushi platter for 2 which came with several pieces of Nigri and 2 fabulous rolls. Sushi was delicious and fresh and we really enjoyed it. We had told Stephanie it was our anniversary so she brought us a beautiful dessert which was so good. I wish I would have taken a picture of all of the food but I try not to pull my phone out when I'm out to dinner especially celebrating my anniversary. I highly recommend this place. They even have the option of to check on their wait on line which is so nice because it did get really crowded as we were sitting there. They don't take reservations but at least you can see what you're in for when you're heading over there. Take a chance and check it out. You will not be...
