This is my second review but after years of eating here, I feel that Sawara deserves a recent second round of kudos. They managed to remain open during the pandemic which may have actually saved my life (ok I'm being dramatic but honestly, it was always a bright spot to go pick up our sushi during a dark time). We have consistently gotten to-go from them now for quite a while - it's our Sunday night ritual pretty much twice a month. I cannot say enough positive things about the owners who go out of their way to be friendly, accommodate substitution requests, not to mention making clean, delicious, affordable sushi. We look forward to trying new rolls every time and our menu has some serious miles on it (attached). ...I think it might be time to pick up a new one!

Bottom line: if you want great variety, great sushi, great value & to feel appreciated for your business, go to Sawara!! I heard they will not be open on Sun/Mon for now due to not having a sushi chef so I hope this gets resolved soon most importantly because how else will we be able to say "See you tomorrow" - on Saturday??!! Thanks, guys for providing Castle Rock a great option for sushi and for being great people....

I'm new to the area and this place has quickly become my go-to sushi place. Their prices are reasonable, their sushi delicious, and best of all, it's as fresh as it comes, prepared right in front of you in less than 5 minutes typically. Unless you're placing a huge order for takeout, there is no need to order ahead, they're that quick. I usually stick to more basic staple rolls, but the only thing I've had bad here was a spicy tuna roll, and that was just because I'd never tried one before and realized I really don't like the texture. It's fresh and fast enough that if you get a handroll, you still get that nice crispy crunch texture from the seaweed. Sure, it's not some fancy restaurant setting, and I've had slightly better sushi in places like China, but for how cheap, fresh, and fast it is, you really can't go wrong here for a quick lunch or dinner. And the staff are very friendly and have their little "see you tomorrow" catchphrase, and the place has always been very clean, and I go in about...

I'm a bit of a Sushi fanatic and Sawara, in my opinion, is excellent. Everything tastes really fresh and, at this point, I have complete faith that I'll like anything I get. I encourage anyone to try their signature dishes/rolls, such as the Ahi Tuna Tower or Super Lava. Every one of these that I've ordered has been phenomenal. Additionally, my SO has a gluten allergy, and Sawara is quite accommodating for her. They have plenty of gluten-free options, including gluten-free soy sauce. The only downside to Sawara is that it's not a traditional dine-in restaurant. You order at the counter and they bring the food to you. This is perfectly fine for me, but if you're looking for more of a sit-down service meal, this isn't...

Ordered two vegetarian rolls (summer and heart attack) and was disappointed. The rolls were drowning in sauce and that’s really all you could taste. The ingredients seemed fresh, but I could only taste the sauce, which was overpowering. Also, the summer roll was supposed to have tomato in it and didn’t. I realize I’m eating vegetarian sushi but all their veggie rolls are nearly the same—avocado and cucumber. There are so many other ingredients you could have in a veggie roll to add variety (carrot, asparagus, sweet potato, eggplant, etc.) and this was just lacking. Probably won’t come back, I’d rather drive up to Denver for decent sushi, as I haven’t had any good vegetarian sushi in castle rock sadly.
