Finally tried Pizza Baby in Charlotte, North Carolina. I have to be honest, I was hesitant. I’m from New York City, born and bred and there really isn’t good pizza here. We got there and really enjoyed the ambience. It was a Monday night so it was kind of slow but they played really incredible music and had a great space. The service was fantastic. Our server Ryan was very attentive, efficient and gave us good recommendations. They had a pretty good special on Monday night for wine and beer. They had a decent drink menu also! The pizza was pretty good. We had the mother with pepperoni. Our only complaint is that there was a lot of crust. The burrata was delicious, and I have to say, the bread that came with it with some of the best I’ve had in Charlotte. I sort of wanted to order more bread, but I figured I would go back. The meatballs were awful. Probably one of the worst things I’ve eaten in Charlotte. They were dry and super salty. The bread that came with it though was unbelievable. Will definitely not order that again, but will definitely go back.

It was amazing: think thick crusted bread completed smothered in cheese and garlic. It came with a tomato dipping sauce. The Roman style pizza was interesting. Tasty and fresh ingredients. What is Roman style? Technically, instead of the traditional tomato sauce and mozzarella cheese, Roman-style pizza is often topped with a variety of ingredients such as cured meats, vegetables, and even eggs. The possibilities are endless, and each slice is a unique and delicious creation. This one in particular, instead of a pie, since we ordered two slices, was sort of a ciabatta bread with all the toppings on top of it. Their PLT sandwich was delicious too: fresh lettuce, crispy pancetta, medium sized tomatoes, some mayo. Truly refreshing and enjoyable! We sat outside as it was a nice early evening day but there was plenty of sitting inside.

We did make reservations in advance, but the building is very spacious with loads of indoor and outdoor seating. Very large bar and large kitchen to view from the seating area. Wood benches and chairs, wish the settee had padding. We will be back. Wish they did lunch service

I don’t leave reviews often, only when somewhere or someone REALLY leaves an impression on me. I cannot say enough good things about this restaurant, the owner and staff, and of course, the star of the show: the PIZZA. I came with my husband and parents on their first Friday and unfortunately, the service was slow and our pizza order was lost in the shuffle, so we waited a while. To me, I was willing to wait as the pizza looked great, but my dad was… unreasonably upset. He had a terrible attitude and treated our server poorly. The owner came over to the table to apologize and comp our entire order, but my dad was too far gone at that point and didn’t react well. We ended up having to leave (probably for the best) before the pizza came. To say I was embarrassed is an understatement, but I was also so disappointed that I didn’t get to try the pizza. The next day, my husband and I decided to come back not only to try again, but to apologize for my dad’s behavior and let them know we appreciated them trying to appease him when he was at his worst. We showed up right at 5pm and spoke with the owner and our server from last night directly just to apologize, and wow, what a gracious response we received. The owner sat us and served us personally, spoke with us about his roots and was so unbelievably kind. He was so happy to see us when we came back and couldn’t believe we were the ones apologizing. We had waited 1.5 hours the night before - obviously not ideal for pizza - but still not worth an outburst or treating people poorly. The server - Ryan - was also happy to see us and was so attentive and kind. We were sat immediately and our pizza came fast and hot.

Now, the pizza - I was born and raised in the pizza capital of the world, New Haven, CT. Pizza is special to me and I’m picky about crust. I’ve tried a lot of mediocre pizza, especially here in the south. This pizza was 10/10 and I don’t say that lightly. This was the best pizza I’ve had in Charlotte in 4 years! Absolutely incredible texture and flavor. It would have been worth any wait time. Highly recommend The Rosemary, I’ll be thinking about it for days.

I can’t thank the owner Steve enough for welcoming us back with open arms and grace after being berated by my father the night before. And Ryan, our server, for handling him with kindness and never losing his cool. You learn a lot about business owners in situations like this, and I can truly say this was an experience that left a lasting impression. To top it all off, they covered our entire meal without hesitation (even though we would have happily paid for that pizza). After an initially underwhelming experience with Pizza Baby when they first launched, I decided to give them another chance to see if things had turned around for the better. After my last couple visits, both takeout and dine-in, I can confidently say that they have!

What stands out most is the hands-on approach of the owners, Steven and Trey. Their attentiveness and dedication shine through in every aspect of Pizza Baby. Steven, with his charismatic control of the floor, and Trey, with his masterful leadership in the kitchen, demonstrate a perfect balance of front and back-of-house excellence. This dynamic duo is not just running a business; they are the heart and soul of what has become a culinary haven for pizza enthusiasts in Charlotte.

Their commitment is highlighted by the quality and care they invest into sourcing their ingredients. Every bite reflects their passion for the craft, from the perfectly balanced sauce to the premium toppings.

The dough preparation technique at Pizza Baby is the best in Charlotte and even rivals the best pizzerias in the country. Every dough ball has gone through a 24-hour natural ferment, followed by a 48-hour cold ferment, that allows for enhanced flavor and digestibility. The texture and flavor are a symphony of perfection, making each slice a testament to their culinary skills and particularly, Steven's seasoned experience with bread baking.

Reflecting on my earlier experiences, it's clear that the initial hiccups were just part of their early launch journey. Steven and Trey have listened, adapted, and evolved, transforming Pizza Baby into a serious contender in the pizza scene and making this a well-deserved 5-star review. I'm excited to see what the future holds for Pizza Baby.

Been to this place a few times now. The food never disappoints. It’s fresh, cooked well, and tastes great. The atmosphere is also cool. Everything is very clean and the staff is friendly. My only complaint is timing. We arrived at 6:55pm on a Wednesday night with a group of friends. We had 5 kids with us. We were sat quickly, but didn’t have a server come to the table to take drink orders, or even fill water glasses, for probably around 15 minutes. Once drink orders were placed, it took around 20 minutes for them to come out. 1-2 drinks at a time came out, leaving some without drinks for a while (mind you, we ordered 3 beers, one glass of wine, and 3 cocktails). It wasn’t until just after 7:30 that someone asked if we’d be ordering food. We ordered 3 pizzas, a salad, and wings. The wings and salad came out in about 15-20 minutes. Those were eaten by the people who ordered them. The pizzas didn’t come out until after 8:30. When we inquired around 8:15, we were told the restaurant was understaffed and the food should be out shortly. Granted, the restaurant was mostly full. However, we also saw a good bit of Togo ordered being fulfilled. Overall, I think over 1.5 hours to get some pizzas is a bit much. A few tables came in after us and were fed and left after us. Everyone was friendly and the food came out hot and tasty. We love trivia nights. We’ll be back for sure, but it would be great to see someone controlling flow...
