Listen, I don’t know if it’s the pregnancy hormones or just the pure magic that is El Taquito Mexican Grill, but these birria tacos have me in an absolute chokehold. I am OBSESSED. Like, I dream about these tacos. They’ve officially become the only acceptable alternative to cooking at home, because let’s face it—when you’re chasing toddlers and growing a human, birria tacos everything else.

Shoutout to my husband for introducing me to this life-changing food truck, which is run by one of his coworker’s family. I’m convinced they’re sprinkling a little love and sorcery into every taco because they’re that good.
