SO GOOD! We've been a few times since opening and are obsessed. Each time the food has been fresh, fast, and unbelievably tasty. I've been getting the salisbury steak breakfast burrito or the ham and cheese breakfast burrito - both are equally delicious.
I'm partial to the salisbury steak - its unique for a breakfast burrito and hits every taste sensation in just the right way. Wonderfully balanced‐ a little bit salty, a little sweet, a little umami. The tots are crispy, the eggs fluffy and light, the meat patties charred to perfection. If you're into a little spice- the spicy mayo adds just enough so that its a pleasant, flavorful addition.
The latte- spot on. Leans toward the sweeter side, but compliments a strong espresso and oh so creamy. Matcha? YUM! We've had the strawberry and its fantastic. I am excited to try their ube matcha next.
Its in a quiet spot, tucked away from the busyiness of the city- with a quaint outdoor patio, causal setting. Great for a quick stop in for pickup orders, or even a quiet morning/brunch/lunch sit down.
The owners are SO nice! You can tell they take great pride in their space and the food they make. I hope they continue to serve CO Springs for a long...

Ordering is confusing for first timers. The computer kiosk was cool but there should be more than one, the people in front of us commented that they felt rushed because we walked up and we felt rushed with people behind us.
Ordered the Salisbury Steak Benedict and Avocado Egg Sandwich. Food was better than average but the Salisbury steak was overcooked and tough and there was an overwhelming taste of mayonnaise in every bite, didn't taste at all like a hollandaise.
The egg sandwich was good, was it worth $12? No. $7 lemonade and $7 side of tater tots seemed a bit much as well for what was served.
This place would be awesome as a grab and go type breakfast sandwich spot, not really the neighborhood or atmosphere for a sit down, brunch, kind of spot.
Good luck to you guys but aside from a change up in menu and pricing, we probably...
Read moreEgg Lush is serving up serious brunch vibes. My sandwich was stacked with flavor—bacon cooked just right, no limp strips here—and the presentation was so pretty it deserved its own photoshoot. The burritos didn’t disappoint either, and the spicy mayo tied everything together like a secret weapon. Washed it all down with a strawberry matcha that was as refreshing as it was Instagram-worthy. Bonus: the owners and staff are genuinely kind, which makes the whole experience even better.
The only downside? The bill. Three meals with drinks ran about $80, and while the food justifies a splurge, the pour-your-own coffee felt a little steep for what it was. Also just a heads up the eggs Benedict which I actually came for is only available Mon-Wed as of right now.
Still, if you’re looking for bold flavors, a stylish spread, and a friendly crew, Egg Lush is worth the stop—just be ready for boutique...
