I'm a southern girl y'all, so I apologize for this long review. Since it's difficult to find relatively good bbq here in the Springs, this is a spot worth driving to, when you have the craving. It's not over-priced, plus you get your money's worth. I had a brisket sandwich with half lean and half fatty brisket. I also had a side of greens and cornbread. First of all, your meat rests on a nice thick potato bun, so it holds the juicy meat and sauce so your bread doesn't get soggy and collapse in your hand. The lean brisket was SUPER TENDER, and the fatty brisket was also not overly greasy. That's the best part... both were not nauseatingly greasy. You can certainly taste the slight yummy smokiness flavor from the meat, and it's not overpowering. The portion for the sandwich was NICE, too. The only thing missing from the greens was hot sauce, a southern fave š. It was full of flavor and had texture...not soggy and bland. The cornbread is made with sweetcorn, y'all! Sweetcorn. The cornbread tasted almost as good as my grandmother's...almost. It was firm on the outside, soft, buttery, and sweet on the inside. Delicious! Compared to my favorite bbq food truck here, this is the best dine-in I've been to. Although I took my food to-go, the inside of their establishment was really clean. If I wasn't in a rush, I would've definitely eaten my food here. Michelle, one of the managers here, suggested I try the sandwich I had. Thank you so much!!!! The other manager (his name starts with an "M", but I don't have with me while writing this review) was the one who suggested the greens and cornbread. Today I went to Mission and had their pulled pork and sausage plate, with a side of Mac and Cheese and corn bread. My buddy had the brisket and beans. First, the meat. It's all smoked with oak. Oak is a bit heavy for some things in my opinion, like I wouldn't smoke poultry with oak. The brisket was well prepared, tender and moist. You didn't need a knife, it was pull-apart tender. The smoke flavor was subtle, not overbearing, but certainly present. The pork was pretty decent, also subtle smoky, but moist and delicious. I liked their sausages better than any other BBQ place in town. Now the sauces. The meat really should stand on its own, and at Mission it does. However, they also have some really good sauces. I tried them all and I liked the Smoky Mountain sauce and the KC traditional. The sides were ok, certainly had that homemade quality to them. I would add some of the sauces to the beans to really kick them up a notch. The corn bread was very good, like surprisingly good. I don't normally think of corn bread as noteworthy, but this was the exception. The atmosphere was really great. I loved the decor and the clientele (first responders and veterans were visible and noticeable throughout the restaurant). Very friendly service and readily available, as one might expect from a newly opened restaurant. Again, I'm a home BBQ enthusiast, so no BBQ is ever going to be as good as or better than my own.
