We'd previously eaten at the restaurant that was here before (Barrigan's). While we personally didn't have much to complain about then, they clearly weren't doing something right... where Los Agaves is thriving, given the continued traffic to the restaurant. On a Wednesday night they were still busy and that's a good sign. We've driven by a few times looking for a "slow" night and usually the place is jumping, but we bit the bullet tonight when it was still early enough the parking lot wasn't full-full.
We ordered enchiladas to go with something simple, baseline, for our first visit. The food met our expectations. I won't say it was jaw-dropping impressive, just very good quality, flavor, and quantity. They gave us chips and salsa, and the entrees came in reasonable time and were hot (plates were actually very hot, and we were warned about that). They sadly did not have Mexican Coke in stock. Drink cups were large. We didn't order alcohol but that's definitely on offer. The enchilada plates were nicely appointed with rice, refried beans, and 3 decent enchiladas with lots of cheese and sauce. Tortillas were offered which we accepted. Those were VERY good... soft, warm, fresh, tasted and smelled great.
There is a 3.5% surcharge for using a credit card. Part of me wrinkled at this, but part of me also understands there is a processing fee for cards that restaurants are trying to offset. Carrying cash is less common these days... so know what you're getting into. There was a sign on the door noting the fee, but you could miss it. There was a small note on the front of one of our menus as well, but not the other.
Our waitress was very attentive to us, checking in frequently. However as we finished our meal we waited a while for the check. She was busy, as the restaurant was filling up, so that can happen. I wasn't sure if we could just walk to the register at the front and pay or if we needed a check/ticket... ultimately she brought a payment device to us, reviewed the bill, and we paid at the table.
The atmosphere is more welcoming than the last restaurant. Less contemporary and dull than it was previously, now a bit more traditional. The seats are very nice, embroidered with the restaurant's name and all. Tables were nice too... sturdy, and all in all, it added to the feeling that the owners care about the experience. It was a bit noisy, partly with the crowd and more with the music playing, so if you want a quieter experience you might not enjoy dining in even on an "off night." I think next time we'll try take-out or even the drive thru.
I like seeing restaurants succeed, and Los Agaves is drawing customers for new or repeat visits. The staff was moving and bringing out all kinds of dishes and drinks. The beans and rice were solid. The second visit was the highlight—perfectly balanced enchilada sauce with a subtle seasoning, beans enriched with bacon fat, and great rice and chips. The supreme nachos with fajitas were decent, though the guacamole portion was small and lacked pico de gallo. As a fajita snob, I found the fajitas underwhelming, but that’s a personal preference.
The third visit, however, was disappointing. I ordered the Mexican plate (hard-shell taco, enchilada, rice, beans, and two tortillas) and supreme nachos with asada. The nachos were good, but the guacamole tasted old. The Mexican plate was a letdown—the enchilada sauce had an overpowering ingredient, making it hard to eat more than one, and the taco had an odd flavor in the meat. The beans were dry, and the rice was unremarkable, leading me to stop after a spoonful. The inconsistency is concerning. It’s unclear whether the kitchen is struggling with a new cook, recipe changes, or the pressures of a busy restaurant, but the quality has fluctuated significantly. The expansive menu may contribute to these issues, as it risks spreading the kitchen’s focus too thin. The parking lot is always full, indicating popularity, but this may be straining their ability to maintain standards.
Overall, Los Agaves has potential with its great service and moments of culinary excellence, but the inconsistency makes it hard to fully recommend. I might give it one more try before deciding whether to return. For now, I’d rate it 3 out of 5 stars, with hope that they refine their execution to match their ambition.

I went ahead and placed my order of 2 chorizo and egg, 1 bean and cheese, 1 bean and cheese with bacon, and 1 carne guisada with cheese. Literally less than a minute went by and I added two more chorizo and egg tacos. I pulled into the drive thru And they informed me that they forgot to add the carne guisada with cheese. That’s fine no big deal. I told them go ahead and add it. I pull up to the window and they give me the total of $19.32 for 7 tacos. They give me the receipt to sign when I noticed that on the window they have a special of three tacos for $4.99. I asked him as to why I was charged $10.36 since they had a three taco Special for That price. She told me because I called back to add the other two that they cannot honor the 499 pricing. She also said anyways, the total would’ve been $8 and some change. This made it seem like it wasn’t that big of a deal to her, but it is my money. If I was short That difference they surely wouldn’t have given me my order. If I was informed of that special, I would’ve ordered my tacos according to that pricing.
